We're going to start with empty pot, bit of olive oil, maybe two tea, two table spoons
maybe. Two onions and just cook that till their, what's your heat on, translucent. High.
So that will cook, when that's, um. Just onions no garlic yet? Just onions. After the onions
have cooked awhile I'll put in the garlic and the carrots. Um about two fairly large garlic
cloves. That's Erik at your feet so watch out. He likes to play on the stools. I don't
think you can see him maybe ill pan the camera. Haha. Me. You going to help cook? How long
does that take to sautŽ. About five minutes. So the onions are almost cooked through, add
in about three, three chopped carrots. And then some garlic, I like extra garlic. What
you got like three cloves. Yeah yeah, two large ones, a small one. Smells good, I know,
garlic, onions. Chopped butternut squash, alrighty. Onions all the way cooked, carrots
and butternut squash cooking. How long do you cook that for? Till the vegetables are
soft. We're going to add about a quarter teaspoon of allspice. So what spices are you putting
in? cyan, allspice, a little salt. That's it? For now, at the end we'll do some fresh
thyme. Because the all spice and um cyan pepper, mainly the allspice I guess, the bottom of
the pot looks dark. Its not burning or anything, you can turn the heat down a little, um, but
its fine its just the darkness of the, of the, spices. Let that cook, the vegetables
will soften. How long? I honestly have no idea, till their soft. Put a fork through
them and you'll know. Um I just use these vegetable cubes, you can get them chicken
and, bullions, and beef as well yeah. Bullions, bullions. For one of these, one cup of water
so I'm going to use 6, hot water, soak it all, turns into a nice broth. So do you use
organic water? Organic water, yeah, straight from the uh farm, non-gmo. If you wanted a
meat version you probably could ad like a lamb. Lamb. Yeah lamb. Lamb would be a good
one. Yeah and you know, beef, chicken broth, beef if you want to be un-healthy. Beef if
you want to be un-healthy. Yeah if you want to be un-healthy add meat. No. aminals. Then
you add in the six cups of broth, water, and let it cook. How long? Till the vegetables
are soft and the seasonings have combined. But after we add in the broth well put in
the um diced tomatoes, crushed tomatoes is what I like to use, the kale and the chick
peas. How long on average does it take do you think? From chopping to final? No for
it to be done from this point? From this point? Um, an hour? Not even. No. cause I mean at
this point the vegetables are almost done and ready and then your just adding in everything
else your adding in is, like the beans are already cooked you don't have to worry about
them, the kale is just going in to give you something more and that's it. And really once
the vegetables are cooked and everything else is going in to complete the soup. Can you
put this over rice? Sure yeah, you could add, even a brown rice or a red rice would be nice.
Quinoa, you can throw some quinoa in there. Think you could cook it in a crock-pot? Probably
yeah. Just put it on low, throw everything in, for 8 hours? Throw everything in Yeah.
I would wait to put the kale in till the end, otherwise it will get really wilty but. Some
people prefer it that way and some people, you know like spinach will get extremely wilty.
Yeah. Kale does the same thing? Yeah but it takes a lot longer for kale to get to the
point where spinach is such a light ingredient. So your putting six cups of water in? mmhm.
Ok. So we got the broth going in. so its been boiling for about fifteen minutes. Were just
going to add in everything else. About two cups of garbanzo beans. Um if you are using
the canned, just make sure they're rinsed, drained, rinsed real well. Why? Less salt,
oh, and anything else their sitting in. and then I do a large 28 oz. can of crushed tomatoes.
You can use like petite dices tomatoes or diced tomatoes, whatever you want. I got to
get a fork for Connie sorry. That's ok edit that out cause the tomatoes splashed up in
my face. I'm gonna keep that in, people love bloopers. Yea show that at the end. Haha.
So the big can of tomatoes. yeah twenty eight ounce. And some, I, I've read about people
using like um, half this size and putting in half, crushed, half diced tomatoes. mixing
it up. And if you don't like, the you know, tomato-y uh, I guess you could put in any
kind of tomato you want reall. You can do that rotelle with the diced stuff. Yeah, yeah.
and we're back, and we're back. So that all just goes in and then, with the kale I don't
chop it, it's a pain, I just rip it up and throw it in. you take the, take the leaves
off the rib, throw that away and just put however much you like in. um, I do quite a
bit actually I don't know. Its very strong isn't it? Yeah, but as it cooks its not. I
don't know I think we've gotten used to it. Kale to taste. Kale to taste. If you don't
like kale and want to use spinach or another green, go for it. I like broccoli rabe in
soup. Chop it up, yeah, a lot of people like that I soup, nice flavor, that's what you
use it in soup for. Um do you use the flowers or the leaves of the broccoli rabe? All of
it. Or rappini. Its rapini right? Same thing. Oh I don't know. No idea. Sure haha. I used
to work in a produce section that's why I know all that. Haha. I'm not super into healthy
food. Yeah. I just worked at a grocery store. I don't know what rapini is. Its Italian um,
Broccoli rabe, Italian broccoli. And even uh, I like using uh, some of the cabbages
too like the savoy cabbage, the crinkly kind. Mhm. Its nice. Leeks. Leeks are a big soup
item. Definitely yeah. So why do you put the peas in last? The what? The garbanzo beans,
oh um I always put the beans in last. No idea why. Haha. Every recipe I ever read, the beans
go in last. Maybe to not make them mushy. Yeah yeah. So you don't cook them too long.
And I guess you can put it in any order you want. You know cook your vegetables what ever
vegetable you want. Throw in your broth, your tomatoes, and your beans. The tomatoes will
get really mushy too. Yeah but I mean after everything's cooked. Oh yeah. Your throwing
in your broth. You probably could throw it all in at the same time if you prepared it.
Yeah yeah, exactly. Pepper, do you pepper? Or just the allspice? Not in, I wont use pepper
in this one, just the all spice. But I, I love pepper. Crushed, you know crushed. Peppercorns
or black pepper? Yeah black yeah. The peppercorns yeah. Yeah I love peppercorn. Just has the
fresh zingy taste yeah. I love it. All right, so your done? Almost. Bout eight or nine stalks,
yeah. Well let that cook a bit and then we're just going to add some fresh thyme, theme,
thyme. Its thyme. Haha. Um and again this is all, I don't like a whole lot of thyme,
its sorta a stronger flavor. You had to think about how to say it? No I didn't want to,
I didn't want to be, seasoning, but thyme. Its an herb. Yeah. So whatever you would like
with that. Season it to taste how ever you would like. And when I do it the fresh is
just peel it off, peel it off the stem. Put it in yeah. Ok. Just take all the little leaves
off it and throw them in. don't throw the whole thing in, no? as soon as you turn on
the camera there goes Erik. Ok the final thing to go in was the thyme. And uh, as long as
all the vegetables are cooked. Heat it up and taste it. Serve it. Your good to go. Put
it in a bowl. I need to see it. I was like is he going to bring the camera over or what?
Im just gonna bend it down. I'll just bring the camera over there. That's it, and that's
