Hello and welcome to Archana's Rasoi (Kitchen)!
First of all, I want to thank you for your overwhelming support and feedback.
One of you viewers asked for some recipes that you can carry when traveling in the winter season.
So that's why I'm going to show you how to make Chatpata Puri. You can also call them namkeen puri.
To know more, stay tuned to Archana's Rasoi.
Let's take a look at what we are going to need to make Chatpata puri.
Here we have 1 cup Jowar (Sorgum) flour.
1 cup wheat flour.
1/2 cup gram flour.
1 tbsp chilli powder
1 tsp ginger garlic paste
1 tsp cumin coriander seeds powder.
10-12 curry leaves finely chopped.
Salt to taste.
We are going to take Oil about 2-3 spoons and water to mix.
Now let's begin!
First, we have to mix these ingredients into a batter.
Let's turn on our gas and heat up some oil
You can use ghee (clarified butter) instead of oil if you prefer to.
While our oil is heating, let's add our ingredients one by one here.
So let's add the wheat flour to the jowar flour that we have taken here.
Make sure the ratio of the jowar to wheat flour is 1:1
After this, we will add gram flour to this.
Now we are adding one big spoon of masala since we are making a spicy puri.
We are also adding coriander-cumin powder, 1 tbsp.
We are also adding coriander-cumin powder, 1 tbsp.
Then we add ginger-garlic paste, about 1 tsp.
Salt to taste.
Now add curry leaves, finely chopped. We usually add coriander but the curry leaves add a unique flavour to the recipe.
We can now add the oil that we heated up in this cooking pot.
When we say we are going to add 2-3 tbsp "mohan", it means we are adding boiling hot ghee (clarified butter) or oil.
Whenever we add ghee or oil to a recipe, it should sizzle when it comes in contact with it like this.
We must mix this properly before.
Now you can notice that the batter is much easier to shape with your hands into small balls. This means our oil has blended well.
This is how it should look.
Then we will add as much water as it can accommodate.
Don't put too much water since we are using Jowar flour. It runs the risk of becoming too soft.
Add the water little by little.
Now we have mixed our batter. We can shallow fry or deep fry them.
You can even make small puris.
Looks like our batter has been mixed well. Now we can start rolling it out.
We will roll it on a plastic sheet of paper
Our oil is still boiling
We will add some oil to the plastic paper.
Now it becomes easier for us to roll it out.
Don't make them too big, they need to be small. And make sure they are nice and thick, too.
Let's see if our oil is hot enough to start... Yes, looks like it is.
Now we can start frying them one by one.
You can store this puri for up to two days without any problem.
This way we will fry all the puris.
So we rolled the batter out and then deep fried them.
Looks like it's ready!
Our delicious, spicy puri (savoury bread) is ready!
I can't wait to taste this but I want you to subscribe to India Food Network.
