Hello, I am Tess. Welcome to the feed my friends series. In this episode, I am going to be
showing you how to make a delicious mango, coconut, and passion fruit sticky rice.
[music] So I have my pan on the boil here. It has
a sieve filled with rice that I have soaked for four hours in cold water and then what
I have done is I have strained it and I put water in the bottom of the pan, brought it
to a boil, added the rice, and now I am steaming it. So it needs about twenty minutes. Alright,
so to begin, gently heat the coconut milk through nice and slowly. For the full list
of ingredients and the method, just check out the description box below. So at this
point, if you want, you can add a little salt. I have just got about a pinch here going in.
This just enhances the flavor and seasons it. I have also got a lime here which I am
going to zest. You can either use a microplane and finely zest it or you can use your knife
and cut slices of the lime and just pop it in to infuse within the coconut milk. the
zest is where all of that good flavor is. I have just drained my rice here and as you
can see it is really sticky. Now you do not want to bash it too much with your wooden
spoon and break the grains. So at this point, is perfect because I am going to add the majority,
probably about two thirds of my coconut milk. I am just going to gently stir it through.
This just loosens the rice and as you can see, it just is absorbing all that really
nice coconut milk liquid. Delicious. You are looking for kind of a nice, malleable texture.
You want it to be soft, but not rice pudding. So now you can take a fork and have a little
taste and see what you think. If you want to add a little bit of lime. You can add a
little bit more salt if it needs or a bit more sugar. Think about the flavors that you
like and enhance it the way that you like it. So now my dish is pretty much ready to
serve. I have got my plate here and I have got one of these, a chef's ring, I suppose
they are called, and I am just going to pop that on my plate and take a spoon and just
dollop that rice into the ring. Now I have greased it so that it is not going to stick.
This is just a fancy way to serve it. It is quite nice if you have got people coming around
to make it look a little bit pretty. But you can just pop it in a bowl and top it with
some passion fruit and mango if you prefer. Just pat it down using a fork or a spoon.
I am going to take my passion fruit and I am just going to top it with the passion fruit
before the moment of truth when I take the ring off. I am just going to take half a piece
of mango which I finely sliced and I am just going to arrange this neatly around the stack
of nice. So I have my sauce and I am just going to drizzle a little bit of it around.
The final flourish is just a few mint leaves. I am just going to pop a few on the top. Now
the moment of truth. I am just going to take the stack up gently. You want to just slowly
release it.
