Hey! Starting another program in partnership with the website Depois dos Quinze! And if you are

You asked and of course I'm going to do today: Cookies!
I start beating 200g of unsalted butter.
200g is the hole package, so you don't have to worry about.
With the butter I'm going to add 1/2 cup of crystal sugar and 3/4 cup of brown sugar.
Brown sugar will give all the malleability we want in the middle of our cookie.

Yeah, that... Malleability.
Now, I'm going to add 2 big eggs.
2 tbsp of vanilla extract, 2 tsp of salt,
and a little bit of nutmeg just to add some flavour to the dough. If you don't want to use it, you don't need to.
It won't interfere on the final result.
And then, just beat it all again.
If you don't have a mixer this is not a problem, you can do this recipe
with a little patience and a fouet, or a fork.
And to finish, I'm going to add 2 cups of sifted flour, 1/2 tsp of
baking soda and 1 tsp od lemon juice, which is used to neutralize
the baking soda taste.
Because the baking soda has a kind of metallic taste and the lemon helps to neutralize it!

And when everything is combined, it's ready. You don't have to mix and beat a lot, otherwise the dough
will develop gluten and we don't want an elastic cookie, we want a crunch cookie.
And to finish, I add 2 tea cups of chocolate chips.
If you don't have chocolate chips, you can chop a chocolate bar in small pieces
and combine on your dough.
I save some chocolate chips to add them later, on top, so they can be even more beautiful!
And now I'm going to give you 2 options of how to make your cookies. The first one, which is most used,
is the one I put a tbsp of the dough and assemble it on a tray
with baking paper.
Everytime you make cookies like this, put them with at least 3 fingers distance between one ball
and another because they they spread on the tray and you will have enormous cookies or a
mass of cookies and it won't be nice.
And the second option, which I prefer, is to bake on cupcake trays, so all of them
get the same size. Smaller, but all equal!
And now I'm going to put my cookies on the freezer for 20 minutes and then bake them for 12 minutes
on pre-heated oven (180°C). This is very important, because these 12 minutes are crucial
for you to have a moist cookie in the middle, soft and crunchy at the edges.
If you bake less then 12 minutes it'll be pappy and if you bake more, it'll be very crunchy.
And then depends on your taste.
While this, I'm going to teach you how to make a very nice little gift for your friends!

The cookies come out of the oven very soft, so it's always necessary that you use a
spatula and put them on a grid so they can dry.
As long as they get cold, they get crunchier.
But for example, this cookie I made, which is taller and was on the cupcake tray, you have to
bake a little bit more than 12 minutes so it can be crunchier, otherwise it will be very soft,
almost like a little cake, because the dough is very tall.
Or you can put less dough, like 1/2 tbsp, which is the ideal.
Now, this one...
Is that big and beautiful, just like those from cafes and snackbars...
It might not be perfect in size, but what gives magic is that it's
perfect in taste and crispness.
And honestly, the nicest thing is that each one has a size, and
this gives some personality.
