Howdy folks how is it going welcome to my *** kitchen today I am showing you how
to make a delicious homemade French onion soup with a gooey cheesy tear and share bread
alongside that will just rock your socks and you can customise it any way you want now
the other day my neighbour Mary knocked on my door and her Daughter had come over from
France with a huge box of onions and she said do you want them? and I was like ok sure so
I am making a French onion soup with proper French onions and this tear and share bread
Matt got in touch via my website a couple of weeks ago and said he found this bread
on pinterest but did not have the confidence to make it can you have a go so I feel I can
have a go too, so I have made it and it is so easy so you must try it and if you are
like that and have found something amazing on pinterest or something like that and you
want me to try it, let me know and get in touch, anyhow if you want to make this hit
pause on the video now write all of these ingredients down, and lets do it.
So the first step is to chop up your onions into nice thin strips I cut mine quite rough
actually because when you cook them you can hack them up with your spatula and what I
found with these being French and grown in Marys daughters farm they seemed to be like
better quality which made me get a bit more upset than normal. I am actually crying right
now. Anyhow with the onions nice and chopped I just splattered some garlic cloves and again
sliced them nice and fine or you could just use a garlic mincer. Over a medium flame drop
a *** of butter and a good tablespoon of olive oil let it melt away initially then
tip in your onions and cook away for a good ten minutes until they start to soften and
look all sexy and stuff. I do not know if onions could ever be classed as sexy but they
are French so lets go with it. With the ten minutes up add a teaspoon of
sugar and stir it through which will help it to caramelise whack on your lid and cook
it for a good ten minutes, every so often take the lid off and give it a stir through
until nice and changed in colour and completely softened up looking amazing. Remove around
2 tablespoons of onions to one side in a little bowl, go back to your pan and add in your
garlic cooking it for around 2 minutes to get that flavour in there follow up with the
flour just one minute to cook through and thicken it do not forget the dry white wine,
oh my goodness then add some really good quality beef stock, whack the lid on it and simmer
away. You really want to let it simmer away for a good 20 minutes, but the good news is
we can let it simmer on a low to one side while we crack on and make this masterpiece.
For the bread chop up the onion we took out of the pan earlier, get it nice and diced
and fine whack it into a bowl with some melted butter, poppy seeds, Dijon mustard, some French
Dijon mustard and some freshly chopped parsley now stir it together until nice and combined,
then give it a little tweak if you want add anything you want, but that will taste amazing
as it is. Grab yourself a good quality loaf of bread
and a bread knife and cut 1 inch strips down the loaf, do not go all the way through go
near to the bottom nice and funky strips on there then rotate the bread and cut the same
be careful with this, take your time and you will get some funky looking squares on there
that are going to give us lovely pockets for our filling. Fill the gaps of the bread that
have been formed with the onion mixture get it all in there pushing down with a spoon
if you need to it will really soak that flavour in and help widen up the gaps. Then you want
to follow up with some cheese, this is gruyere cheese that I grated up earlier so really
stuff it in there too and that will really help that gooiness later on. Wrap it in tin
foil, shove it in the oven for around about 15 minutes, let it all do its magic in there
once you take it out and pull back the foil it will look amazing you can add some more
tweaks now if you want to or just simply remove the foil and put it back in the oven for a
good ten minutes and once it is done it is looking pretty darn stonking. Oh my goodness
guys it tastes amazing, my first ever French onion soup it is mild and flavour packed,
no seasoning in there it is kind of tender, I feel like I am sat in Paris eating and living
the French dream right there and the bread speaks for itself I had to put it away so
gooey and yummy I wrapped it back in foil in the oven in a couple of hours I will re-heat
it back up and it will taste freshly baked again, I have enough soup for at least 4 other
people so the girls will be happy too, just got to reheat that too right.
So comments from my last video: I love the fact when you are feeding her (mrs Barry)
I did the mouth action too you know how you move your hand and go ah ah etc, everyone
does that right? Phoebe is the spitting image of her mum that
is very very true pictures of Pheobe and Mrs Barry growing up are identical and for Chloe
unfortunately she looked a lot like me growing up but hopefully that will change as she gets
older they are all my friends I love those girls and you love mrs barry too so thanks
for that. When will be the next giant food? Katie says
when is the next giant food I am filming a giant food on Thursday in 2 days time that
is going up on this Sunday with James, no idea what it is going to be yet we just go
with the flow, so if you have any suggestions let me know down below.
Can I do the chubby bunny challenge with my family which is basically shoving marshmallows
in your mouth and you have to say chubby bunny Phoebe I tried doing that with her she got
scared after putting two marshmallows in so it did not really work out, although Chloe
she would probably be amazing at that so I will probably do that that is it then guys
I hope you enjoyed the video if you did do not forget to give it a thumbs up share subscribe
and comment and all that stuff I will try and reply to as many as I can at the moment,
you must make this, if you do send me a picture @myvirginkitchen and if there are any recipes
online you want me to try out to make you guys feel confident you can do it, send it
my way and I will see you again next time
