We want to make a marinade
First.
Oil heating in the pan, small,
Medium-sized red onion chopped,
And two cloves of garlic.
We will cook that until it --

Brown and you don't want to let
It get scorched.
Nice and soft
>> and then you have a jumbo
Cast iron pan.
>> you have to go with the cast
Iron.

What kind of cut of beef do you

When we were shopping last
Night i couldn't quite remember

It doesn't matter.
This is where you add the good
Stuff.
A half cup of grade b maple
Syrup.

That is definitely looking
Good.
You want to make sure that you
Get the spatula out because you
Want to absolutely scrape all
Of that goodness out.

>> it is about the goodness.
You don't want to waste it.

You feed them pancakes and they
Have that little bit of maple
Syrup.

Seriously, you are going to
Leave that on your plate?

How long should they let the
Meat sit like that in the
Marinade?
>> an hour.
You can let it sit for six,
Eight hours and that would be
Fine.
>> and overnight.
Right in the pan, right on the
Grill.
That is an easy way to go.

The onion cooking for a few
Minutes, you want to add two
Tablespoons of --

We do a variety of outreach
From government affairs.

It is maple syrup, it is a big
Industry up here.

Income for a lot of maple sugar
Producers but it keeps
Landscapes viable.
You can see it all over the
Place.
Going through the woods and you
See tracks and tracks of maple
Tubing.
They are keeping, you know, the
Landscape working.
And that is what is really
Important up here.

Growing industry in vermont.
>> and it is unique.
We take it for granted
Sometimes being up here in
Vermont.
You can pretty much go into any
Place and find vermont maple
Syrup.
It is very unique to new
England.
A little bit of quebec, unless

It is very much a northeast
Product and that is what makes
It wonderful.
A nice little crispy brown on

Cabbage sliced thin and red
Onion and a shaved carrot and
That is dressed in the juice of
One lime, maple syrup, salt and
Pepper and a little oil.

It is a nice quick slaw.
And this black beans, garlic --

Sugar.

Once the beef is done, you let
It rest for a few minutes but
That is not much fun.
You chop it up and get to
Eating.

Little sauce on that as well.
>> yeah, you can put a little
On this.

We did the maple tacos at my
House quite a bit.
It is always a crowd pleaser.
And if you can get a
Three-year-old to eat it, then
You should do it all of the
Time.
That is the rule.
That's great.
It has a little bit of maple in
It but everything else, too.
The heat, the chili spice, but
The slau is -- slaw is great,
Too.
