Hi, I'm Jennifer Cail. On behalf of Expert Village I'm going to show you how to make
this rich espresso fudge. For the next step in decorating our fudge now that it has all
been cut, is to melt white chocolate. We are going to use a double boiler and you are going
to heat the water in the bottom layer to a simmer. Now once the water is hot enough you
don't actually need to leave this on the stove, we'll be melting two ounces of white chocolate.
That small amount on the top of the double boiler will melt just fine without the chocolate
in the water being still on the stove. By taking the pot off of the stove to melt the
chocolate you are going to eliminate the possibility of burning the chocolate or heating it up
too high. As I spoke earlier it's really important to use high quality white chocolate in order
to have actual white chocolate if you buy lesser white chocolate such as the white chocolate
chips that you might find at the grocery store. Usually it's not really white chocolate it's
just flavored vegetable shortening some other substance. White chocolate is made from cocoa
butter so that is how you are going to tell it's going to give you the best flavor and
also the right consistency for melting it to be able to drizzle over the fudge. Now
that all our white chocolate has been melted it's time to move on to the next step.
