AUSTRALIA THIS AREA HAS BECOME A REAL FOODIE DESTINATION, FAMOUS FOR ITS PRODUCE AND OF
COURSE, ITS WINE.
10:10:01:11 In the 1970s when I was growing up, it wasn’t
really about the wine. It was more about the sherry and the port.
10:10:07:15 AND HERE AT SEPPELTSFIELD THEY’VE BEEN PRODUCING
PORT SINCE 1851. AUSTRALIA’S LARGEST PRODUCER OF FORTIFIED WINE, THEY HAVE A COLLECTION
OF VINTAGE PORTS DATING BACK OVER 130 YEARS. I’M MEETING CHAD ELSON WHO’S GOING TO
GIVE ME A TOUR AND HOPEFULLY SOME SAMPLES AS WELL.

and I… from my memory, the only thing that was edible on my plate was some braised cabbage.
[LAUGHS] It doesn’t really take much to braise cabbage.

MALAYSIA 30 YEARS AGO, AND ADELAIDE’S CENTRAL MARKET PLAYED A KEY ROLE IN MAINTAINING THEIR
FOOD HERITAGE.
10:35:29:21 Back then you couldn’t even buy coriander,
and now you can get that at the supermarket, you know, and people put it in their barbecue
salads. This place is kind of, before all that stuff was really available, it was kind
of the home away from home ‘cause it’s where we shopped and found that solace, you
know, in a new country. We were able to buy the ingredients that we needed to cook our
traditional dishes. I think the thing that makes this market so special is you can come
from any culture and be able to create food from your, you know, from your cultural background.

always have really interesting produce on this table.

HEADING TO A REMOTE BEACH ON THE EYRE PENINSULA TO BRUSH UP ON MY SKILLS. THE FISHING HERE
IS MEANT TO BE SECOND TO NONE, SO WITH ANY LUCK I’LL CATCH SOMETHING TO EAT. FIRST,
I NEED TO BUILD A FIRE SO I’VE GOT SOMEWHERE TO COOK.
10:02:48:05 The good thing about being a kid in Australia,
was when you were at school they teach you survival in the bush. They teach you how to
build a fire and the thing about it is that you’ve got to start it off a little bit
first, and then we bring everything up the centre. Then you get the rocks underneath
it and the rocks stay nice and hot as well, so you got the hot rocks and you’ve got
yourself your actual fire.

KILOS.

it’s the first fish I’ve caught in a very long time.
