Fried milk fish and bitter melon salad
I'll pair it with a bottle of an Australian Reisling
I'm here in Farmer's market in Cubao.

Now, I just got back in a condominium here in Taguig City.
Now its time to cook.
First step is to marinate the fish.
So the first dish is Fried milk fish and the ingredients are..
I sliced the fish to 4 pieces.
To marinate the fish, the ingredients are..
...vinegar, pepper, salt and garlic.
Just press the garlic with knife (as shown) to have a lighter, more delicate flavor than minced
Remain your other hand clean and the other to mix in the fish and the ingredients.
Pour in the vinegar..
...pepper
then salt.
Then the other pieces..
...more garlic again.
...vinegar again.
....pepper.
..then salt.
Its that simple..
Place inside the fridge for an hour..
... for the fish to absorb the full flavor.
Step 2: Preparing the bitter melon salad
Cut the bitter melon in half (as shown)
Remove the seed inside
Remove by scooping (use spoon)
Better to cut it thinly
Season in more amount of salt
Once you added the salt...
Mix together with the bitter melon
Leave it for 30 minutes...
...to extract the bitterness.
While waiting for the fish marinade and the salted bitter melon..
This is a bottle of Australian Reisling..
This is from Clare Valley in South Australia.
It still contains sugar..
It still contains sweetness
And the sweetness will compliment the bitter melon salad.
and has citrus character..
Like lemon or the calamansi flavor.
So this really compliments the fish as well.
and that the reason why I paired this wine with the dishes I cooked today..
MMM. YUMMY!
Steps for the bitter melon salad..
Let's now prepare the bitter melon salad.
First ingredient will be the tomatoes.
Slice the tomatoes with the same sizes you made with the bitter melon.
Leeks - fine thin slices.
Then place it in the bowl..
I really love spicy dishes from Bicol..
the bitter melon salad don't necessarily need to be spicy but as for me...
Actually I really like to put few chili in this salad.
Cayenne Chili.
remove the seeds.
small slices only.
Already washed and remove the salt in the bitter melon
then mix it in the bowl (with the chili, tomatoes and leeks)
Make sure its all in equal parts. Half of bitter melon and half of the other ingredients.
Now for the seasoning of the salad..
1 tablespoon of shrimp paste
a pinch of salt
a pinch of pepper
a pinch of sugar.
and few amount of vinegar
and calamansi/lemon
and squeeze
I use... (ohh! crappy seeds haha!)
I use the back of the knife (as shown) to pour in the juice straight to the salad.
...one more.
HAHAHAHAHAHA!!
Mix the salad
Good color combination of the veggies and the shrimp paste
then put it in the fridge
So,basically the bitter melon salad is obviously colorful and appealing to the eyes
I want to be served chilled.
Chill the salad in the fridge for an hour
Frying the fish
Now, I'm going to fry the fish.
Place the fish into the paper towel
...to dry
If the fish is still soaked in the marinade sauce, this will ousted the oil and scatter.
...then press in the paper towel (as shown)
the oil has heated.
Slowly put in the fish; not like me haha (so it wont aggravate the oil)
HAHAHA!
Flip the opposite side of the fish
Now its already crispy..
Its ready and I'll put it in the table..
Let's eat!
Done! Fried fish with vinegar and pepper as its sauce.
Spicy Bitter melon salad (Bicol style)

Lets taste my dish!
We usually use fork and spoon but as for me I want to use my bare hands (filipino style)
So, the fish together with the salad. (a must!)
...and with the wine.
The wine isn't too sweet because of the bitterness of the bitter melon.
..but the flavor of the bitter melon didn't over power because of the sweetness of the wine.

They really compliment each other as a food & wine pair..
