I'm going to cook Prawn Pinakbet and pair it with a bottle of Arneis.
Pinakbet is an indigenous Filipino dish from the northern regions of the Philippines; made from mixed vegetables sauteed in fish or shrimp sauce.

...so they're really good in cooking this dish.
So change the eggplant for the smaller ones.. but will it have the same price? :)
...naaahh, of course it's a little bit higher than the normal eggplant. haha :))

First is that I don't want it too acidic.

A small amount of garlic.
First veggie will be the squash (pumpkin)..
....because it has the longest cooking time.
next I will add the eggplant.
...then okra.
Im gonna put in a big spoon of the shrimp paste
...The last vegetables I'll add will be the string beans. (Bagiuo Beans)
and then... then the bitter melon
..that has been salted to lessen the bitterness.

...and they're really fresh
Perfect for hot climate...
..together with seafood, vegetables..
...its not a really big wine and not too acidic
