Fried milk puddings
The Fried milk puddings's recipe is easy : Heat the cream
the sugar...
the orange's peel...
and the cinnamon stick. Stir continually, so it doesn´t get sticked to the bottom.
Wait till the first boil...
Reduce the burner, to moderate heat.
from 1 to 10, at the 5. Stir it once...
and now let´s do the fried milk puddings
Start beating slowly the eggs.
add a little of milk. Now, add the flour ,
bit by bit and stiring
the milk is at room temperature
and now add the cornmeal
While you stir it, add the rest of the flour
As you can see, it´s getting consistency
now, add the rest of the milk, bit by bit
after this, mix it with the rest of the cream, which we've already heated up
Once the cream has rest, remove the orange's peel
and the cinnamon stick. They have already gave all their flavour
Increase the heat from the 5 to the 7 and wait till it boils, stiring continually
and now, add the mix bit by bit
that contrast between the heat and the cold, will thicken our mix
Important: Don´t stop stiring
now, increase the heat to the maximum, to get a boil
It seem to appear lumps, but they slowly disappear
now, pour it in the platter
stretch it a bit and enjoy his scent
let it uniform...
and spread out a bit of butter over the surface y pasamos un poco de mantequilla sobre la superficie
so the surface don´t get stiff
let it cool down, cover it with transparent film and let it rest
We had let it rest 6 hours, now let's cut it in little squares
first in one direction and then in the other
Prepare all the ingredients:
mix sugar with ground cinnamon
we'll wet the fried milk puddings in this mix after taking them out off the frying pan
prepare a bowl with breadcrumbs
another container with the beaten egg,
the cut fried milk puddings
and a platter to set them afterwards
Heat butter at soft heat
from the 1 to the 10, at the 6
Start soaking the squares in the egg
drain it and cover them with the breadcrumbs
spit it
and put it in the frying pan
do it with the rest of squares...
with the butter we don´t need too much heat
Spin them as they get colour
the fried milk puddings are done. With this batter we give them a special detail
add a bit more of butter...
so they don´t get too much dry
spin it and cook it both sides too
Turn off the burner and take them out
Batter them in the sugar and cinnamon mix
spin it all over the mix
and put them on a platter
Do the same with the rest of squares
And here they are... our fried milk puddings!
As you can see they are creamy, tasty and with a really good scent
