Today I will be making vegetable frankie
also known kathi roll.
This is a popular Mumbai street food.
Frankies are great for any time meal or on to go.
This recipe will make 6 frankies
but this recipe is 3 part recipe.
First we are going to make roti (flat bread)
then we are going to make the filling,
last we are going to roll the filling in rotis to make frankies.
So first to make roti we will need:
3/4 cup of all purpose flour (maida or plain flour)
1/4 cup of whole wheat flour (atta)
1/4 teaspoon of salt
1 tablespoon of oil
Approximately 1/3 cup of water.
We also need about 1/4 cup of all purpose flour.
This will help us rolling the rotis.
And about 1 tablespoon oil
We will use this to grill the frankies.
For filling we need
2 cups of thinly sliced cabbage
1 cup of thinly sliced carrots
1 cup of thinly sliced green bell pepper
1 cup of chopped tomatoes
1/2 cup of boiled, peeled and mashed potatoes.
1/2 cup of green peas
I am using the frozen green peas.
2 tablespoons of oil
1 teaspoon of cumin seeds
1 teaspoon of finely shredded ginger
1 green chilli finely chopped
2 tablespoons of cilantro
1 teaspoon of salt
And 1/2 teaspoon of garam masala
Now I will make dough for roti.
All purpose flour
Whole wheat flour
Salt
And oil.
Mix it well.
And now pour the water.
Don’t pour all the way, just keep maybe about 1 spoon.
So we will need little bit more.
We need firm and smooth dough.
Dough is looking good, very firm and smooth
and not sticking to my fingers.
So I am going to cover this and leave it for about 15 minutes
before we will make rotis.
Now I will make filling.
Heat is on, medium high.
Will add the oil.
Oil should be moderately hot but not smoking.
Oil is ready.
So first I will add the cumin seeds.
Stir.
As they are cracking
put the green chillies.
Ginger
Cilantro
Mix it well.
Stir just for half a minute.
Add tomatoes.
Cook the tomatoes for about 2 minutes.
Tomatoes are nice and tender.
Add all the other vegetables.
Cabbage
Green peas
Carrot
Bell pepper
And salt.
So mix it.
Cover it and lower the heat to medium
and let it cook for about 7-8 minutes.
Do stir it occasionally in between.
It has been about 7 minutes
and vegetables are looking very good.
Nice and tender but they are not mushy.
So time to add the potatoes.
Mix it well.
We are going to cook for about a minute with potatoes.
Vegetables are ready.
Turn off the heat and add garam masala.
Mix the garam masala really well.
And my filing is ready.
Now I will roll the rotis.
So I have made this dough about 15 minutes back.
It’s looking really good, very firm and smooth.
So just knead it for few seconds.
And divide them into 6 equal parts.
Roll them between your palms to make patties.
Press the patties from both sides in dry flour
it will help us rolling the roti.
Roti should be very thin about 8 inch in diameter.
So if roti start sticking to your rolling pin or to the surface
you should put little bit more flour.
Just dust it.
Roti is looking thin and very nice.
So this is about 8 inch in diameter.
You can roll all the rotis at same time.
I am ready to make rotis.
Rotis are made over flat skillet.
Heat is on, medium high.
So this should take few seconds
you will see, roti has changed the color
and you have started seeing some bubbles.
So this is the time to turn the roti over.
And it’s looking very nice have some nice color.
So just press it
and cook for another half a minute.
It should have light brown spot other side.
As you see it has nice color and roti is ready.
Its final step. Now I am ready to make the frankies.
Put the roti over flat surface and
then put some filling lengthwise
and leave about 1.5 inch from one side to roll it.
So we are going to roll this like a burrito.
And roll it tight.
Looking good and just put little bit oil not too much.
Heat is on medium.
So now I am going to put the frankies over and grill both sides.
Nice and crunchy.
Both sides should have nice light brown color.
And should take half a minute both sides.
This has been about half a minute so I will turn it over.
And it looks really nice and has a very nice golden color.
So let’s do the same from the other side.
Turn it over to check.
And it looks very good
and frankies are ready to serve.
Frankies are looking great.
You can prepare the rotis and the filling in advance
and make the frankies when you are ready to serve.
I like to serve the frankies
with hari cilantro chutney and tamarind chutney.
