Hi! I'm Lori Schneider with Figs Catering in Austin, Texas. On behalf of Expert Village,
today I am going to show you how to make a Orzo Pasta Salad with roasted mushrooms and
Gorgonzola cheese. I've been in the culinary industry for over 13 years and I've really
enjoyed coming up with new and different combinations of foods especially when it is foods that
I like. So one of the things that I really enjoy are wild mushrooms, Balsamic Vinegar
especially this time of the year when it is Fall and toasty outside. So this is really
really a nice warm comforting dish for me. So one of the things that I like about this
dish is that you've got some really great wild mushrooms that we've roasted in the oven
and the roasting of the wild mushrooms really concentrate these flavors and makes them really
excellent. And you see around the edge that we've got some reduced Balsamic Vinegar that
brings a little bit of sweetness to our dish and we use Orzo Pasta and Gorgonzola cheese
to finish it out with a really nice tang and a really great flavor. This is great by itself
as a dish or as a side to something like a roasted chicken. So in this series, I will
be showing you how to make Orzo Pasta Salad with roasted mushrooms, Gorgonzola cheese
and reduced Balsamic Vinegar.
