And we are Facebook friends and Ruben few months ago went to Mexico

Well, so I was getting some cooking lessons from my mum
And He was posting pictures on Facebook
Oh, Ruben was with his mum and cooking so let's come here and try all of these recipes
So I am here and very excited

I am going to show you how to make Chorizo
Chorizo!
Okay, this is my cat

So what is Chorizo
Chorizo is basically, pork
And you can use it for many different Mexican dishes
But for our show we are not going to use pork, we are going to use beef
And you said you can also use other types of meat
Yeah, you can use chicken, you can use beef, you can use anything that you want
You can also make it as vegetarian
Vegetarian!!! Tofu... Tofu Chorizo
One more thing is, Mexican chorizo is different from Spanish
It is right
Obviously, I believe that Mexican chorizo is better
It is different.
Spanish Chorizo is more like Sausage, you can just cut it and eat it
Mexican chorizo, you have to prepare it, and then you have to actually cook it in different dishes to eat it
Okay! SO we gonna to make Mexican chorizo with Ruben
Are you ready? Yes …
Okay... Let's start…..
First, Remove the seads from the dried peppers
boil them in water for 20-30 minutes until the skin of the peppers detaches.
So Ruben! what will we do with that beautiful chilis?
You can remove the skin, my Mum does it
So, you have to skip the skin
Once the chilis are ready, place them in a food processor.
Add the spices (salt, cumin, and whole cloves) and sliced garlic cloves.
One important not here is if you do not have ancho chilis
you can use any type of dried red peppers
Otherwise, instead of a paste, you can make a spice mixture using 1 tablespoon of paprika, 1/4 teaspoon of hot chili pepper
Add a little bit of apple vinegar and start mixing until you get a smooth paste.
If you don't have apple vinegar, you can use white vinegar
Scrape the sides of the food processor from time to time, to make sure that all the ingredients are well
You may have to add a little more of the apple vinegar to get the mixture going.
Again, if you don't have the peppers, you can use the spices
you need to have a mixture of spices, instead of a paste
mixed and continue blending until you get a smooth paste.
It is very smooth. Actually taste it. Yummyy!

Now, did the meat
You have to prepare the meat the night before
what did you have to do??
First, Cut the meat into small cube (1 inch x 1 inch).
Place the meat in a bowl
cover it with the apple vinegar and 1 teaspoon of salt.
Wrap the bowl with a plastic wrap, place in the fridge, and let the meat sit in the vinegar overnight.
I actually take a missed the salt.
It's OK! because it is going to have the salt from the paste.
Suggest! add the salt to the vinegar and cover the meat.
Now, drain the meat from the vinegar (as much as possible).
Make sure that there is not vinegar liquid left
this is a team effort, you hold . . . I squeeze it
This is the strained meat, you will add the paste
Mix it with the chili paste
Use your hands to make sure that all the ingredients are well integrated.
add a little bit of olive oil
but you can use any type of oil
That is it!
So we will put it in the fridge for one hour at least
you can storage it for future in freezer, using plastic bags
So basically, the recipe is done and we just prepare it for storage
you can use a zip-lock, food plastic bags, or other type of meat wrappings
Wrap the chorizo in individual portions
You just have to remove from the freezer a couple of hours before you want to use the chorizo and you are set!
