Hello and welcome back to the Simple YouTube channel. Today I'm cooking up one of Simple
Nutritionist Fiona Hunter's skin-loving recipes - carrot and ginger soup. The full recipe
will be linked in the description box but here's a look at what you'll need to create
the soup. First of all, some olive oil. And some garlic - you can either chop your own
garlic or I'm using one from a jar. Some salt and pepper for seasoning - you'll also need
an orange for the zest and juice as well as an onion. Then on to one of the main ingredients
which are the carrots. You'll also need some ginger which you can chop into a smaller section
and then also some spring onions to finish off the soup as a garnish. You'll also need
some chicken or vegetable stock. Start by finely chopping the onion. Fiona knows that
onions are rich in prebiotic fibres which encourage the production of friendly bacteria
in the digestive system. Some studies suggest that these friendly bacteria may improve skin
immunity and hydration, moisturising the skin from the inside out. Now peel and chop your
section of ginger - I'm going to use a zester to make things even easier but if you prefer
you can finely chop your section of ginger. Now on to one of the stars of the show. Peel
and roughly chop your carrots. Now Fiona says carrots are rich in beta carotene, which may
help to protect the skin from damage by the sun's harmful rays. Then heat your oil in
a large saucepan and cook the onions for around 3-4 minutes. Give them a good stir! Then add
either your chopped garlic or half a teaspoon of one from a jar, and also your grated ginger.
Don't forget to add the carrots and give everything a good stir for around 5 minutes over a medium
heat. Next, zest your orange. We'll talk a little bit more about oranges in just a moment.
Then add your stock to your soup - I used vegetable stock for my particular soup but
you could use chicken. And also add the zest from your orange. Then take the orange and
cut it in half, and squeeze the juice into the soup. Now a study by Bristol University
scientists said that the vitamin C in oranges helps manufacture collagen, essential for
keeping the skin toned and supple. Then add a little bit of salt and pepper to your soup,
depending on how much you each you like in there. And give everything a good stir together
before bringing to the boil. Once boiled, add your lid and simmer for around 30 minutes.
Then transfer the soup to a food processor and blend until smooth. When you're ready
to eat, return the soup to the pan and gentle reheat it. Then serve your finished soup out
into bowls. I've made enough for 2 servings here but the full recipe makes enough for
4. Simply finish off with by adding some finely chopped spring onions to the top of the soup
as a delicious garnish. And there you have it - for many more recipes please feel free
