Carrot is a very healthy vegetable, you can make various dishes with carrots
like Carrot Halwa, Carrot Pickle, Carrot Subji and Carrot Raita
Today I'm going to make Carrot Raita
Lets see the ingredients required for making Carrot Raita
For making this we'll need
Carrot - 300 gm, shredded
Low Fat Yogurt - 500 gm
Salt - 1/2 tsp, adjust to taste
Masala - 1/4 tsp Cumin Powder + 1/4 tsp Pepper Powder + 1/8 tsp Black Salt
Cumin Seeds - 1/2 tsp
Red chilly powder - 1/4 tsp
Asafoetida - 1 pinch
Bura or Powdered Sugar - 1 tsp (optional)
Green Chilly - 1, finely chopped
Cilantro - 1 tbsp, finely chopped
Lets start making Carrot Raita
Cook shredded carrots in a cooker with 2 tbsp of water
Cover it and turn on the gas,
You need to cook carrots only till it becomes a little tender
so turn off the heat when pressure starts to build
In the meanwhile, we will blend the yogurt
Take yogurt in a large bowl and blend it
You can use an insulated casserole for making yogurt at home in winters
Now turn off the gas
Let the pressure release, in the mean time we will prepare tempering for raita
Heat a tempering pan
Add cumin seeds
Roast it
Add asafoetida
It is roasted, now turn off the gas
Add tempering to yogurt
Pressure has released, now open the cooker
Take out carrots in a strainer
Press it gently and remove extra water
Let it cool
You can use this water as vegetable stock, for making chapati dough
or in raita. I will use it in making this raita
Add all other spices, sugar and green chillies to yogurt and mix
Remaining water has cooled, add it to the yogurt
Carrots have also cooled, add it to yogurt and mix
Turn raita into a serving bowl
Garnish with chopped cilantro
Carrot Raita is ready
It is very delicious as well as healthy
You can serve this as a side dish with lunch and dinner
