Our choice in Minervois
has always been to work on Syrah.
Here it is really the place for its southern expression.
They are mainly planted on small limestone clay terraces.
We favoured a blend based on the deepest Syrah
from a terroir called La Livinière which is a rather warm terroir.
These Syrah are very expressive, with quite a full body.
We then aim to balance these syrah with some others coming from the western.
These are fresher and benefit from some first atlantic influences,
they also have a bit more acidity.
We complete our blend with some Carignan,
the grapes come from very old vines and as usual in our blends.
Carignan brings acidity, tanins in our wine,
a very good way to balance it and bring some depth to the voluptuous syrah.
We are really focused on preserving the ideal balance in this appellation
which is a good example of the Mediterranean wine.
This wine is solar,
quite generous,
deep but thanks to the Carignan
it keeps a lot of tension, freshness and balance,
which is the constant aim in our work for all our blends.
