Uh, a good friend of mine, Suzanne, gave it to me.
Well, actually I we,nt over to her house
and she... we had it for lunch and I said
'Hey, I like that', so she gave me the recipe.
And how often do you make it?
Let's see...once or twice a month.
So, what are the ingredients?

So uh... first well... I always use tofu.
Tofu?
Yes, and I either use the momen type which is the firm type,
not the silky type,
or sometimes I use atsuage, I think it's called.
I don't remember. What... what's atsuage?
It's... I think it's been deep- fried.

It's a kind of a tofu?
Yes, it's a kind of tofu.
So you can use either.
Then you also need onions... well, 1 onion, actually... one onion...
a clove of garlic... uh... 2 potatoes,
2 carrots, a cup of peas or 2 eggplants...
Eggplants?
Yes, and 1 stalk of celery...
uh...1 cup of mushrooms,
3 or 4 tomatoes.
And also for seasoning, we need...uh... Iet's see...
curry powder, soy sauce, salt, pepper.
What a combination for that Sa UCe.
Yes, it's wonderful... yes, yes, a very nice blend, yes.
So, um... now we know the ingredients,
how do you make it?
So, first of all, you have to prepare the vegetables, OK?
So...uh... uh... first you mince the garlic,
then you chop up the onions,
not into big slices
but you know medium size...
and then you dice the potatoes, carrots, eggplants, celery...
and the mushrooms, you can cube them...
you can cube them.
And the tomatoes, just quarter them.
Just cut them into fourths.
That's right.
Do you fry them all together?
OK I will tell you how to prepare it.
Let's see now...I usually use a frying pan or a skillet...
and what I do is I put in a little butter or olive oil.
Then I sauté the garlic and the onion...
and when that's... for a minute or two.
Then I put in the tofu...
and what I do is I brown the tofu...
and that takes a minute or so.
Then I add the vegetables...
and at the end I add the seasonings. OK.
So I'll give you the measurements. OK...
so, it would be 1 1/2 teaspoons of curry powder,
a half teaspoon of salt,
a dash of pepper...
A dash of pepper?
Yes, and 2 to 3 teaspoons of soy Sa UCe.
And then you jus,t stir it and cover it
and on a low heat, simmer for about 30 minutes.
And then, it's ready.
Your house must smell so good while that's simmering.
Yes, I mean the curry smell is just wonderful.
And what would you serve this with?
OK... um...well, you can serve it with brown rice or white rice
but often times, I'll make cornbread.

Yeah, cornbread goes well with this...
and sometimes I'll have a 7- Iayer salad.
A 7-layer salad? What's that?
Well, it's got 7 different kinds of vegetables.
You like vegetables, I can tell...
Well, they're healthy.
Now last... my last question is when you serve it,
you've told me what you would serve it with, but
do you serve it on a plate, or do you serve it in a bowl,
or do... do you put the curry on the side?
OK... well, you know some people like to have um...
the curry on top of the rice...
Right, that's Japanese style.
Yeah, but we don't like it that way.
So what we do usually is...um...
I serve it on a plate,
and we sort of like push the rice on one side
and the curry on the other side.
Well, it is a rainy day and it is a good day to uh... cook something like that...
