Hey Cookaholics, Chef Kendra here and today we're just making a simple caramel sauce that
you can dip your apples in and you can put it over ice cream and it's just very good.
Alright, let's do what we do and head into the kitchen and make it happen.
OK, guys we got our ingredients ready like we always do. We have our heavy whipping cream,
butter, a light corn syrup, vanilla, sugar, salt, and some water.
We're going to get our pot under medium heat and pour in our water. The next thing we're
going to do is add our sugar, 38 just like so.
We're using a little bit of corn syrup to reduce crystallization which would completely
ruin our caramel.
We'll still have a little forming on the side of the pan and you can take water and a clean
pastry brush and wipe down the sides, but it's no big deal as long as it stays on the
side of the pan and not in get into our caramel.
So we stirred that up until it started to bubble, stop stirring, now you're going to
have to do two things here.
Is to be brave and let it go until it's amber in color a watch it and remove it as soon
as it turns amber in color.
Pour into a large heatproof bowl, yeah, I know my bowl isn't large. Stuff happens ya'll.
Add the cream and the butter and stir until it's smooth.
Don't be alarmed it's going to act all violent and stuff but it's no big deal.
Look at that river of caramel, that's what's up, guys. The next thing is to add the vanilla
and our salt.
This is fine pink salt from Pakistan but any fine salt will do. I don't like table salt
here because salts like this has a cleaner flavor to me.
OK, we're going to give our caramel sauce a robust stir, cover it with plastic wrap.
Slide it in the fridge for 1 hour and that's all it is to, guys.
Man, that looks fantastic.
OK, we're going to taste this. Look at this, it's the perfect consistency. Oh my goodness.
Yo, this is good. It has everything you want in a caramel sauce.
It's rich, it's creamy and it has the right texture. Alright, I hope you guys give this
one a try.
