Hello, my names Michaela Hyde and I'm a health management coach and that means I help people
who want to change their lifestyle through diet and activity to really improve how they
feel, improve their energy levels and there's a real emphasis on behaviour change because
actually that's one of the most fundamental things we need to address when we want to
make those sorts of changes. Now I'm thrilled to be here today working in partnership with
Ideal Weight to bring to you a really delicious nutritious easy to do recipe. And today I'm
going to cook for you some Moroccan skewers. I've opted to use some Turkey which is a brilliant
choice because it's very lean, you can use chicken if you prefer, it's really down to
personal preference or even what you have in your fridge or freezer. Now in addition
to the Turkey, which we are going to marinade, 2 tsps of paprika, 1/2 tsp ground pepper,
half tsp of ginger, and I'm using fresh so adjust it according to your preference of
flavour, you have 1/2 tsp of Turmeric, you've got a couple of garlic cloves which have been
finely chopped if you prefer, we've got 3 tbs of chopped fresh parsley, 1 1/2 tbs of
lemon juice and 1 1/2 tbs of vegetable oil. And i'm going to mix all of these things together,
in a bowl with the Turkey. So I'm going to pour those in now. Obviously the lemon juice
and also the oil gives the spices something to cling to which then adheres to the meat.
In goes the turmeric, what a fabulous colour. In goes the parsley. I think one of the joys
of cooking is just stirring things up and this is something you used to love doing when
you were a child and here I am being very creative with colour in the kitchen for my
meal. Now let's give that a quick stir and then in goes the Turkey. Nice big chunks of
Turkey there, there's approximately, in this case I've used about 400g of Turkey. If you
want to, you can use more Turkey and again it just depends on the intensity of flavour
you prefer to go for so that's now ready to be marinated. I'm going to cover that with
some clingfilm and leave that for a good few hours. If you want, you can do it the day
before that's sometimes quite nice if you really want to just come in from work and
start cooking but that will need to marinate for a good few hours. Then that will be going
in onto some skewers, we'[ve got some skewers here, now the skewers you'll need to soak
in water, they are wood so they don't' burn when you come to cook them, that's really
important obviously if you're not using wooden ones, no need to be concerned with that. So
really, everything's ready to go, that was just so simple and easy and I know it's going
to be delicious. So I've take my Turkey out of the fridge and it's been marinating for
a good few hours now so the Turkey would really have taken on those flavours of the different
spices, the Turmeric, the Paprika, the garlic, so many of my favourite things all in one
dish. I'm going to put this on skewers remember skewers need to be soaked because they're
wooden and we don't want them to basically to start burning under the grill. Let's take
one of the skewers, take the pointy end and just thread the meet onto the skewer like
this, it smells amazing it really does smell beautiful. Now I'm going to put, I think i'll
just put one more on there like so. And I'll do the next one, my grill is pre-heated so
that I can be ready to put these straight under the grill to start cooking and it really
just takes a few moments on each sides, 4-5 minutes. With chicken and Turkey, you do need
to make sure it is cooked right through. You might just want to cut into one of those.
So I think I'll do just one more, let's pop those on there, the grill has been preheated
already and it really is as simple as this. It really is as easy as it looks, so this
will now go under the grill for a few moments, just make sure it's completely cooked through
which is always important with Turkey and chicken. Well my skewers have just come out
of the grill and they look and smell amazing so without further ado i'm going to try some
right now. Ok, here goes, that's so good. It's really spicy, excuse me eating talking
with my mouth full, there's a real sense of the Turmeric and Paprika coming through, that's
really good, it's healthy, it's a wonderful lean meat, it's very versatile and things
like Turkey and chicken really do take on the flavours you put with them so you can
really be creative actually if you want to use different spices, you can but that works
very well. I'd even add a bit of Yoghurt to that on the side, it is quite hot and spicy
and that would actually take some of the heat out for you if you don't like things too hot
but personally I love it that hot so it's a great one to try.
