Today, we are going to make "Green Peas and Mint Soup".
To make this soup, we require fresh green peas.
Heat the butter in a non-stick pan.
Add the finely chopped onions.
Saute on a medium flame for a few minutes.
Add the green peas.
Add 1 1/2 cups of water.
Add salt to taste.
Bring to a boil.
Simmer for 15 minutes or till the peas are cooked.
Cool and blend in a mixer to a smooth pure and keep aside.
Take 1/2 cup of water in a broad non-stick pan.
Add 1/2 cup of milk.
Add the prepared green pea puree.
Add the freshly ground pepper.
Mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
Add the chopped mint leaves.
Serve hot garnished with mint leaves.
