Hey, everyone. This is Stephanie Manley with Copykat.com. Thank you for
joining me. Today, I'm going to show you a recipe you can make for meatless
Mondays, and it's really, really easy. We're simply going to use pasta, a
little bit of butter, some fresh herbs. Today, I'm using basil, but this
recipe works equally as well with some fresh chives. We're going to use
lemons and a little bit of parmesan cheese. So, we're going to put this
meal together in the time that it takes you to cook the pasta. So, let's
get started.
First thing we're going to do is go ahead, get our water boiling. We're
going to add a little bit of salt, and then add two portions of pasta and
let that boil. OK. So, I have my pasta done. It's right here in the bowl.
I've taken some of my basil. I have it ready to go, and I'm going to go
ahead and give my basil a nice chop. Going to take all of my leaves here,
and I'm just going to put them in a stack, and I'm going to try and roll
them up. Then, I'm going to give them a chop. .
Then, I'm just going to take my basil. I'm going to put it in here. The
next thing I'm going to do is I'm going to zest about one lemon, and go
ahead and put the lemon zest in here. Now again, if you don't have fresh
basil, chives work really well. You could also use dried chives in here, if
you rehydrate them with a little bit of water just before you use them.
That'll work really nice. This smells really nice and fragrant right now.
Alright. So, now we're going to add the juice of lemon in here.
I'm going to pour a couple tablespoons of warm melted butter in, and I'm
going to finish this with some wonderful parmesan cheese. I'm going to
give this a stir. You know what? That's it. You have a fabulous quick and
easy meatless Monday pasta. So, we've just made meatless Monday quick and
