OK. Let's get ready to make up the filling for the Black Forest Whoopee Pies. Straight
forward cream-cheese filling. We've got a little bit of butter, and a little bit of
cream-cheese. We're going to start creaming those in the electric mixer. Do this at low
speed. OK.
Right now, I'm going to add a little bit of salt, then I'm going to add a little bit of
cherry liqueur. I'm using a domestic product, it's made in the US, it's cherry liqueur,
but it's a little bit - more of an Odavi or a distilled spirit.
If you're making a traditional Black Forest Cake, you need to use a product called the
kirshwasser, and that's literally cherry water - and that is a product that comes specifically
from the Black Forest region of Germany, which is where a Black Forest cake gets its name.
It's all about the cherry, the kirshwasser, the Odavi, these are things that are really
going to take it to the next level and transform it from just a simple cake to a black forest
cake.
So, I've got the cherry liqueur, cream cheese, salt, and butter. I'm going to start adding
a little bit of confectioner sugar; a little at a time. I can really smell the cherry in
that, it's awesome.
Alright, that's coming together nicely. I'm just going to scrape down the bowl really
quickly. I've got a lot of confectioner sugar at the bottom. That's the part you want to
make sure that gets mixed in. And the texture that you're going for on this, is a little
bit on the firmer side. You want that Whoopee Pie to hold together, and you want enough
confectioner sugar so that the frosting, excuse me, so that the filling is nice and firm,
it'll hold onto that Whoopee Pie.
OK. That's just about where I want it to be. Let me take a quick look; I'm going to pull
it off. So, I'm going to scrape down the bowl, get a little bit of the filling off there.
I want it to be firm enough to hold its shape while it's in the Whoopee Pie. Yeah, that's
a nice consistency, I like that.
Alright, so let's get ready with the cherries. A little bit more of the Odavi and the chocolate
whoopee pies to make the Black Forest Pie.
