How you guys doing? Well today we're going to do a brunch recipe.
Since it's a great day outside, we're gonna do something kinda quick.
We're gonna do a leftover roast chicken salad, we bought one yesterday, and couldn't finish the whole thing, yaay!
That great moment, when you open the fridge and see that chicken from last night
First thing we're gonna do is to shred te chicken. Just take the meat from the bones.
If you wanna leave some of the skin, no problem, nothing wrong with a little fat in it, that makes everything delicious!
Now, we're gonna squeeze the juice out of one orange to mix with the chicken.
Just gonna use my knife to get the juice out.

Sorry! You know, we like to do something special.
So, you just pour the juice in the chicken, carefull not to let the seeds drop in the bowl.
No need to strain the juice, you can leave those little orange buds in, they'll give a nice texture combined with the chicken.
Just mix it all with your hands.
While he mixes those two, i'm gonna cut the red onions.
We're using red onions, because of their colors, and they are a little stronger than regular onions.
Try to cut it in really thin slices, the thinner you can, the better.
So the onions don't take over the flavor of the salad.
Toss them in the bowl, opening them up with your hands
If you're a little OCD like me, you can switch to a bigger bowl.
A little pepper?
Yes, please.
White pepper or black pepper?
Black please, i always prefer the black pepper.
Extra *** olive oil. A good drizzle of olive oil.
There you go!
To give a little more freshness, we're adding some mint leaves to the salad.
And we're not gonna chop them, we're just tearing them with our hands, that way you get the most of the mint's scent.
With the mint in the salad, you just mix it really well.
Give it a taste, to check.
Get a good spoonfull of salad.
Hmmm, it tastes amazing, salt is perfect!
Don't add any salt unitl you taste the salad!
We have here a gorgeous radicchio!
Usually you can discard the outside leaves, they sometimes are a little broken and burned.
And the raducchio is great, cause the leaves alredy come in a shell shape, so cute!
We separate the leaves, and they're like this!
We choose the radicchio because of it's color too, our chicken is so white, even tough we have the onions and the mint. We want a little contrast with the purple of the radicchio.
We arranged our leaves around this bowl, so cute!
Now we just put the chicken salad in the bowl
This looks, and tastes great!!
After you settle the salad in the bowl, just put some mint leaves on top of it, to give it a little more color!
And it's done!!.

And just wrap the leaf around the salad to close it! And there you go!
