Hi And Welcome to Steve's kitchen, today we are going to make McDonalds french fries
The perfect recipe for McDonalds French fries. I was inspired by
an article by Kenji López and I'll put a link down here in the
description bar. There is a science to making the perfect
french fries, as you can imagine but today we're just going to make them

McDonalds french fries here today. Okay guys I have got my potatoes peeled and ready here, I'm going to
slice them with a mandolin, if you haven't got a mandolin you'll have to use
a knife but the mandolin enables me to
cut them perfectly to quarter-inch cubes every time
so I take my potato and its
with a device for gripping the potato and saving your fingers
slice it down like this and there you see
perfect McDonalds style French fry
now if you have to use a knife just
just cut it into slices and then slice it
into french fries but you can see by using a mandolin here again
you can see every single one of them's replicating perfect
McDonald style french fries.
There you go guys we've got the french fries now soaking in
water, that's just to remove the starch
I,ve got a bowl and a half
as I say I'm producing more french fries than we're going to use because we're going to
freeze these up at the end.
Now just after you've soaked them for a good two or three minutes
we're going to take the starch water & pour it away
so both bowls just for that
starch water clean away
okay guys the french fries are now rinsed the starch is off
we're going to pop the prepared french fries
just rinse that last bit of water, starch water out of there
we are going to pop the prepared french fries
into a saucepan a large pan
and then the french fries need to be
submerged in water we don't have to put them in too deep water
because we're just going to need to boil them through, so
just add enough water to cover the top of the french fries
like so
okay and once you've got the french fries in a little water we're going to add 2
tablespoons
of plain salt and
2 tablespoons of, you can use
any white vinegar, in this instance I'm using a
rice wine vinegar but any white vinegar will do, it could be a
malt vinegar also, so 2 tablespoons of vinegar a little extra for luck
and there you have it they're ready to go over to the stove for
boiling
so here we are over at the stove I'm just going to turn the gas on
to full and we need to get this water
up to a boiling temperature and I've got a timer here so I can set the time
for five minutes
once the water has reached its boiling point
we need to cook the french fries for a further 5 minutes
no longer than that because you don't want them to go too mushy
so I'll just put the lid and we'll leave those
to boil away
there you have it the french fries have boiled for
five minutes and now we're ready to turn the gas off and take them over
and rinse out the water
so we just pour the french fries into a colander to
drain of all the water and then we need to refresh the french fries which is to
cool them down
and stop them from cooking, so I'll just pour a little cold water over the top of
them now just to
rinse off the remaining salt water
and then were going to take the french fries and just soak them now into cold
water
to allow them to cool down completely and stop the cooking process
so here they are the french fries have cooled, just gently moving through
now you can see, if you feel the french fries now they actually
feel slightly cooked, I'll just
try that, one tastes good, tastes like a french fry without the frying
now I'm going to pop them in back into the colander
to remove the excess water and then once we've
allowed them to drain we're going to move them over here too
the other side where I've laid out a clean tea towel
any absorbent surface and just lay the
french fries out to allow them to dry and we're going to leave these for a few
minutes now just for the water to
drain off the french fries before we start the frying process
So just spread them out a little bit, there you go
so here we are guys we're over at the deep fat fryer and
I'm just putting a portion of the french fries into here
I preheated the oil to 190 degrees Celsius which is 375 degrees Fahrenheit
and I'm going to fry these french fries off
in three batches because we've got quite a lot
So you have to have the oil up to temperature and then we'll dip them in and just agitate them
slightly see the steam coming off now basically this process
is going to be no longer the one minute and
it's twofold we are partially cooking the the fries and removing all the moisture
out at the Fries
so there they are
I've cut a little bit of the time there for you and
the french fries as you can see are not browned
they've been in there no longer than 60 seconds
and we're just going to take them out of the hot oil and now
and let them drain a little bit and I'm going to pop them onto some
onto a flat tray with some paper towels just to let most of
the oil off, so there you go
now got three other batches to do
so I'll come back in a moment when all three batches
been pre fried.
So there you have it guys, all the french fries arenow
cooked off, took me three batches to to Fry these for one minute
and I'm just laying them out on a tray with some paper towels and the french
fries
taste like slightly uncooked french fries
we're going to pop these now in a freezer once they've cooled completely
and later we'll be frying them off properly
Ok Guys here's the pack of french fries straight from the freezer, these are the ones that we made earlier on now as you can see I've got a big batch so we can just take out a small portion
and today we just want to make a bowl of french fries so they're oiled so they don't stick together too much, so we're just going to pop one portion into a bowl and that's what we're going to fry up today
So if you join me over at the fryer I will show you how to cook them perfectly
OK Guys here's our french fries, they are frozen and ready to go in the fryer which we have pre heated to 190 degrees Celsius
that's 375 degrees Fahrenheit. Now these have been frozen as you know
from my previous steps and that's broken down, the ice particles have broken down the inside of these chips
so we get a nice fluffy interior and a crisp outside, 3 minutes at the most
and we'll keep an eye on them as they go. So into the pan
and then plunge them down into the oil. Just agitating them a little bit to keep the chips separately, the french fries.
There's the alarm, we are coming up to 3 minutes now. We're going to take the
french fries out. They should be just about ready
yep they are looking a good colour now. Just turn the oil off
and you can see that they've fried up golden brown
we'll just drip the oil off a little bit
and there you go guys, just shake off the oil and pour those into
the bowl with a little bit
of paper towel and there you have it guys
They if I'm not much mistaken look pretty much like
McDonalds french fries. They're crispy
so we just going to see season them now with a little bit of salt
and roll them around to let them get covered
There you go guys there they are, Authentic McDonald french fries or least
made at home authentic McDonald french fries. They're crispy
they taste delicious, they taste so much like the shop, like the McDonald made ones.
we've got a load of them in the freezer, you can make them any time you like.
