The backyard barbecue channel today we're cooking out mine
volcano potato recipe but first I like to give a be shown real
and thank you to Greg over a Ballistic Barbecue
and Dan Smokey Goodness they both look great you two channels
in a help me oh quite a bit after the video

now let's get started the
in this recipe search 2 to 4 people
I will take a quick look at the ingredients and equipment you gonna need
before we get started two large russet potatoes
eight slices of bacon
four slices of smoked turkey from the deli
1 cup grated cheddar cheese
half a cup of sour cream
1 tablespoon of hot sauce
this is Uncle Nathan's ghost pepper sauce 2 tablespoons
diced green onions will chop these up right before we serve them
and apple coring tool
toothpicks preferrably with no colour two pieces of aluminum tin foil
about one foot long. Two 2 to 4 ounces of fruit wood to smoke
this is Apple word and a set gloves
got a pretty good little cut on my thumb on keep dry and clean
start by taking the potatoes and give them a good wash under cold water
I like to use a little brush with stiff bristles to get into all the little cracks
once you have them washed pat them dry with paper towel
take a knife and poke a few holes in the middle the potato
take the potato
just wrapped in tin foil. Just like a baked potato
time to get the grill going today we are using hardwood lump charcoal
place the potatoes directly on the hot charcoal
or direct heat if using a gas barbecue let them cook for 20 minutes
come out every five minutes and give them a flip Just got the potatoes on the hot coals
now's a good time to make the volcano sauce take your favorite hot sauce
and add 1 tablespoon to half cup
of sour cream give it a good mix
and will put in the fridge till we are ready to serve. Every five minutes
check on the potatoes can give a quick flip after 20 minutes take the potatoes off
and let it cool down for a couple minutes till it's okay to handle
take the potato of the tinfoil find the bigger and end
chop off but a quarter inch flip it over
as zigzag pattern to cut the top off take your Apple corer
and core out the center the potato not going to deep
and we will get the next one done. Here's a peek after it's all hollowed out
now let's wrap it with bacon
take four strips bacon and firmly wrapped around each potato
pin it down with the tooth pics start the bottom
and just from work your way up
next take the smoked turkey and cut it into 1-inch squares
now it's time to fill the potatoes
start with a pinch of turkey just put it right in the middle
and grab a pinch of cheese keep making layers until it's full
to finish off the stuffing make sure you put a little extra cheese right on top
it's going to melt and flow over. The volcano potatoes
are wrapped and stuffed. let's go get them on the grill. Get your grill set up for
indirect cooking
place the wood on for a little bit a smoke
set the volcano potatoes on the other side
and shut the lid and it will be done in about 45 minutes
potatoes have been on for 15 minutes let's take a peek

the volcano potatoes have been cooking for forty minutes and they look great
I'm going to take one potato give it a coating of Ted Readers
Apple brown Betty grilling sauce to add another layer of flavor
plus it's gonna give it a nice shine making the bacon look like candy
volcano potatoes just off the grill
gonna pull the tooth picks out and top with the volcano sauce and green onions.
go around and pull out any toothpicks out that you placed in
top it off the volcano sauce that we mixed up
so it's flowing over the sides and a few spots let it heat up your run down on
its own
and top it with some of the green onions
you can see as a sour cream heat's up it gets thinner and starts to running down. Volcano Sauce
let's cut it right down the middle and see the layers of flavor
check it out. Cheese is all nice and melted all that smoked turkey
got a nice layer smoke on the cheddar cheese

all wrapped in bacon yummo It's good
