We're going to start to make a very fresh, light soup
made from english peas
incredible!
At the National Trust the idea behind these recipes
is to highlight the outstanding natural quality
of the raw ingredients.
We're going to make a very simple stock.
These are the components:
a few carrots
chopped up
onion the same
great!
Mint - just take a few leaves for later on
and some lovely rosemary also
Next we've got garlic
a couple of cloves is fine.
I'm crushing the garlic
releasing the flavour.
Transfer this over
Onions in
mint, rosemary, garlic.
Peas, in we go.
These are only going to take a couple minutes
you can eat these raw, they're fantastic and sweet.
We just want to soften them.
Strain them
into the collander
keeping this stock.
They don't have to be too dry.
Into the blender.
Add garlic to the blender.
Pause the blending and add these lovely, crisp
romaine lettuce.
Straight it - the blender will do the work for you.
This is important now
add the stock.
Back to the pan.
Butter to add a bit of richness.
It just lacks a little seasoning.
A little fresh mint is going to add so much to this dish
and just a little yoghurt.
