Welcome to the very first
episode of I Know Jax for 2013.
I'm Joe Talentino.
This is a great year.
I can just tell.
Our show has come a long way
since its humble beginnings,
and I should know, because this
week we have been travelling
down memory lane, digging into
the video archives and watching
I Know Jax stories from the
past.
Since the start we have made
new friends and forged new
partnerships and I Know Jax has
staked its claim on
Jacksonville's media landscape
and proven that we are here to
stay.
We've had a lot of faces you
may recognize on the show.
I'm a big fan of George
Clinton and was thrilled to
have him on the show.
Then William Baldwin came
to town to promote a new movie.
And famous model Yoanna House.
But most exciting to me
was when I got to meet one of
my favorite Bond girls of all
time, Jane Seymour.
When everyone thinks of you,
they think of Bond and Dr
Quinn.
But you have also been doing a
lot of other things recently,
right?
I did Wedding Crashers and
Somewhere in Time.
People have discovered the
Scarlett Pimpernel.
I also met up with Miller
Gaffney from the TV series
Market Warriors at the Art and
Antique Show.
I always say that being a
Southerner, always works to my
advantage.
Something that surprised me
was to find out that there are
others out there who are just
like me.
Jacksonville is full of people
who - just like me - like
having fun.
Maybe I'm not such an oddball
after all, maybe I'm more suave
and sophisticated than I
thought.
Now, if I could only learn how
to spit out the right words
when I need to.

on film, we took the camera out
to our End of the World Pub
crawl.

Everyone met up at Green
Room Brewing in Jax Beach
wearing their cool End of the
World Tshirts.
Then we hopped on the bus.
We even got to a special
preview of the inside of the
soon-to-open Aardwolf Brewery
in San Marco.
Everyone was really
impressed by the big ceiling
fan.
It even says big - ...yeah,
you know what..
- fan on it.
Our pub crawl was a lot of
fun.

sports events for us during the
year.
One of my favorite events was
of course when the US Soccer
Team faced Scotland at Everbank
Field and won.

USA! USA!
I love rugby, and enjoy
watching our national champions
the Jacksonville Axemen.
Not to mention the
cheerleaders.
The Jaguars training camp
was also exciting.
And I got to experience
fast-paced indoor lacrosse for
the first time.
Let's not forget the
Sharks.
And SharkNation.
And then there's of course
the unforgettable cheerleaders.
I know that my friend Marc
Wisdom also enjoys
cheerleaders. Who's Marc?

Pour House in the Avondale
Riverside area with Marc
Wisdom, the beer guy.
Today we're going to talk about
something really cool.
What is it? Lambic beers.
What's a lambic?
It's a specific type of beer.
A sour beer, only brewed in a
certain part of Belgium, near
Brussels.
They usually make it with a
fruit extract or a fruit in the
brewing process.
What we have in front of us is
the Framboise, which is a
raspberry beer.
It takes the sourness away.
It's a great beer for those who
are usually not in to beer, but
want to try something.
It's sweet, and very good.
Try it!
A little bit of a girly beer
maybe?
Women do enjoy this beer.
Very tasty!
Very raspberry, with a lot of
flavor.
Not very beer tasting.
Not at all.
It has the sourness of a
lambic.
There's another one, the krik.
Krik is cherry.
There's Cache, which is peach
flavor.
There are several flavors that
you can find in your local
store.
It's a good dessert beer, very
flavorful.
We have learned something new.
Lambic beers good for guys, as
well as girls. Absolutely!
If you are just getting into
microbrewed beers, this might
be a good thing to try.
I think so.

always have a great time when
we get together, and I always
make fun of the fact that he can't
speak proper English.

What are we doing today?
We are tasting wine.
We're taking your training
wheels off a little bit.
Just don't crash and burn.
We're tasting Waterbrook
Cabernet.
The Columbia Valley from
Washington State.
You remember some details...
I know I'm supposed to check
the color. Yes.
How does this wine compare to
others? Dark.
Kind of thick, dark. Yes.
Cabernet tends to be darker.
We can't see through it.
So that indicates what we're
dealing with.
It's a Cabernet and probably a
heavier wine.
Full bodied.
Then we swirl it to get air
into it.
Then we can look at the legs.
We can.
We can look at the legs for
what it's worth.
It's basically an indicator of
alcohol.
So we don't spend too long on
that.
It has little stringy things.
Wow!
You don't like stringy things.
You're catching on. Legs.
We really don't spend too long
on that.
Then you smell it.
Through some descriptives at
me.
Just to help you along the way.
Cabernet tends to be less of
the red fruits.
Less of the strawberry,
raspberry. Not so berry.
Typically with cabernet, for
me, you get more plum,
blackberry.
You might get cherry, but
really ripe cherry.
Cassis kind of flavors.
Give it a sniff and see how
those kind of flavors are
matching up.
He does that funny thing with
his mouth.
We're not quite there yet.
I can't get it.
So what are you getting?
Full bodied? It is.
It's lasting longer in my
mouth.
So it's dryer, full bodied.
This is Washington State, a
little bit cooler compared to
Napa for example.
If it was from Napa, the fruit
would be more up front.
Secondary would be way more in
the back.
With this, the secondary, the
tobacco, the spice, chocolate,
the oak really comes through.
Do you get that? I do.
It's hard when you don't have
two wines to compare.
I'm just learning what it
means to have oak and such, but
I get it.
It's the secondary kind of
flavors.
It tastes good I know that.
And it's red.
I got those two right.
Baby steps.
We are making our way.
I'm going to sum this up a
little bit.
Waterbrook, from Columbia
Valley. Washington State.
A little cooler, so it has
second flavors because of that.
The grapes don't ripen as much.
I'm going to stop, because I'm
ahead.
That's more than 99 % of the
people would get.
I'm looking forward to what
we're going to do in the next
wine guy segment.
