Dear viewers, I'm Shamsun
A warm welcome from The Bangla Kitchen
I'll be making a very simple dish today
It will be dal
Perhaps you all know how to make dal
But I hope to show you a different way, perhaps new way of making it
Before I start cooking, let me show you the ingredients you will need
Masoor dal (red lentils)
Salt, as per your taste
A little turmeric
Mustard oil
Or you can use sunflower oil instead
Pure butter ghee
Chopped garlic and ginger
Sliced onions
Tomatoes
I've used 4 small-medium ones
Lemon juice, if you like things sour
Cumin seeds
Mustard seeds
Panch phoron
Green chillies and dried chillies
Green pepper
Olives
A small stick of cinnamon
Chopped coriander
Potato cut into small cubes
These are all the ingredients you will need
I've put the dal in the pan on medium low heat
I'm now adding just over 1/2 the amount of onions
as the rest will be used for the tempering
Add hot water
Salt, as per your taste
1 teaspoon of turmeric powder
You'll need to bring this to the boil
When you add a little oil to the dal it helps to cook it faster
Keep this in mind
as without the oil it can sometimes take a long time for the dal to soften
I'm adding 2 Tablespoons of oil
I'm cooking this on a medium high-flame to bring it to the boil
Once it comes to a boil, turn the flame down to very low and allow it to cook slowly
The dal has now come to a boil
Turn the heat to low
and add the potatoes
Put the lid back on and allow the dal to cook slowly
15 minutes have passed
be sure to check on the dal every now and then
When the water reduces add some more hot water
I'm now adding in the green chillies and green peppers
after stirring, I'll pour in a little more hot water
Add the olives and sliced tomatoes
I'm going to turn the heat up
to help cook the tomatoes
See, the dal has now completely cooked
I'm now going to remove it from the heat
and make the tempering
I've added some oil (to a new pan)
To this I'm adding some mustard seeds
a small amount of cumin seeds
a little panch phoron
a small (flat) cinnamon stick
3 dried red chillies
and some fennel seeds
sliced ginger
sliced garlic
sliced onions
Fry all these well
Now I'm adding some green pepper
When everything has browned
then pour it on to the dal
You can now see that everything has browned well
See how lovely the dal has turned out
To finish off I'm going to add some fresh coriander
and another ingredient that's a little naughty...
that is ghee
By adding some ghee it enhances the tastiness of the dal
Sprinkle some over the top
It will taste different from the norm
By adding the potatoes you get a wonderful creamy texture to the dal
That's it. The yummy dal is done..

You'll see for yourself how creamy it is
and although the ghee makes it richer and you may feel you shouldn't add it
but occasionally it's okay to indulge
Make sure you keep an eye on the salt and check it from time to time
