Pumpkin Borek

at this episode, we are sharing a borek recipe which is particular to Zonguldak region
"Pumpkin Borek"
let’s see the ingredients list at first, then we will see how to cook it
4 phyllo pastries
1 cup of milk
1/2 cup of olive oil
for the filling; 2.20 pounds of pumpkin
1 cup of granulated sugar
1/3 cup of thickly beaten walnut
2 tbsp olive oil
for the upper side; 1 egg
after the ingredients list, let’s see how to cook it
I’m grating the 2.20 pounds of pumpkin…
thickly
after grating the pumpkin, I’m adding 1 cup of sugar…
and 2 tbsp of olive oil
I’m mixing it
now, I’ll cover the lid of the pot…
I’ll place the pot over medium heat…
I’m cooking it until it softens, by checking it time to time
the pumpkin is cooked, it is very important to cool it down, so I’ve cooled it down
now, I’m adding 1/3 cup of walnut all over it and mixing
after preparing the filling mixture, let’s prepare the sauce
I’m separating the yolk and the white
actually there is no need to use the white, but…
just the yolk gives a better view over the borek
so I’ve separated the yolk for the upper side 29 I’m adding 1 cup of milk
and 1/2 cup of olive oil
and mixing it
I’m putting the sauce aside also
now I’ve 4 phyllo pastries
I’m cutting them
it is very easy to cook the borek
by this way each of the pastries has cut into 4 pieces
we have 16 phyllo pastry pieces
almost everyone knows how to prepare “Rose Borek”…
by the same method…
I’ll prepare the “Pumpkin Borek”
now I’m taking the first piece…
I’ m spreading some sauce all over
I’m placing some filling mixture…
onto the large side of the piece
and making a roll, but not very tightly
now I’m shaping as the “Rose Borek”
I’m getting the ending side down, and placing onto the tray
I’m repeating the same processes for the remaining pieces also
let’s prepare the last one also
I’m keeping it by this way
I’ve some more sauce
I’m adding the remaining yolk in it also
I’m mixing for a while and spreading all over the boreks
the boreks are ready
I’m placing the tray into the oven which is prehated to 356 F
I’ll bake them, until they turn into red totally
I’ve removed the boreks from the oven
they are ready to serve now
