This breakfast bake is so easy to make and tastes divine. In fact I pretty much gobbled
all of it up before I even finished filming the video, it was that good! Best of all,
like all my recipes it's super low in calories and very good for you :)
I have included a bunch of different veggies in this bake, but you can mix it up and do
you own custom versions as well with your favourite veggies and toppings.
Lets start cooking!
You'll need
An egg A mix of spinach and rocket leaves
Some cherry tomatoes A mushroom
Some avocado And chopped onions are optional!
Also a small bowl or baking dish you can put into the oven
Step 1 chop up your veggies
Start by chopping your veggies up into bite size pieces, I've chopped my cherry tomatoes
into quarters, sliced my mushrooms and chopped up my onion into small pieces. Take your avacado
and score it with a knife into little cubes and use a spoon to scoop the little squares
out! Step 2 mix it up like a salad
Now put all your veggies in your baking dish. If you have veggies like spinich leaves, you
can place it on the bottom or sides to make it easier for you to mix the other diced veggies
in the middle. Having your veggies in smaller pieces makes it easier to mix them together
and yummier to eat, so you get a bit of all your veggies in every bite.
Once you have combined your veggies, crack an egg on top
and sprinkle some salt and pepper to season. Simple right??
Step 3 bake it
This is where the magic happens, bake your breakfast goodies in the oven for 10-15 minutes
at about 180 degrees. You can bake it for longer if you prefer your egg to be more cooked,
or less if you like it more runny. I baked it until the top just turned white and jelly
like, so I know it was all soft and yummy.
And now we're done!!
It's super delicious and yummy and easy to prepare!! This breakfast bake is less than
200 calories and combines both protein and fresh veggies. Great way to start the morning!
If you like you can also add a low fat cheese to melt on top, but I like my breakfast bake
simple and fresh. I added a bit of tomato sauce as well, but you really don't need to,
it's super tasty already :)
Best thing about this dish is that it gives you the perfect amount of time to get ready
after you throw it into the oven.
