We have basically designed a harvester
and it looks like a great big biplane, and a group of 10 people
will go out.
and they'll start first thing in the morning and spend
the day picking asparagus.
When we go to harvest our asparagus,
we pick the whole field every day.
It's part of the lily family so,
like any other flower,
it likes moisture. So it likes to have its roots wet. And it also likes sun.
If you get a really hot day like we had the other day in the 30s, it can
actually grow 6 to 8 inches in one day.
If this is the ground and there's one like this, you can't pick it today,
but by tomorrow it could be all the way up to here. So you have to pick that one tomorrow.
another one following it under the ground, it could be up, and then the
following day, it could be ready. So that's why you have to harvest it every day,
all by hand. So it's a very labor intensive crop.
