Berry Pie
Ingredients
to meke short pastry you will need
300gr. plain flour
120gr. castor sugar 120gr. soft butter
30gr. water
a pinch of salt 1 teaspoon of nutmeg powder 2 teaspoon of cinnamon powder
How to make short pastry:
mix all the ingredient into a large bowl
and knead until you obtain a smooth dough.
Cover it with plastic film,
and put it into the fridge for about 30 minutes.
to meke pie filling:
500gr. berries
150gr. castor sugar 5 or 6 tablespoof of flour
a lemon 150gr. melt butter
a pinch of salt 2 teaspoon of nutmeg powder 1 tablespoon of cinnamon powder
a tablespoon of limoncello
How to make pie filling
Mix all the ingredients in a bowl (except for the flour)
and add the lemon juice and the grated lemon peel.
pour the mixture into a pot
mix until boiling.
turn off the stove and add a packet of gelatin powder
and the flour to the mixture.
How to make the pie
divide the dough in two equal pieces
and cover a tin (30cm of diameter) with one of them.
pour the filling into the pie
and covert it with the rest of the short pastry.
pay attention to closing the border.
with a sharp knife make the classic cut of Berry Pie.
Make a mixture of milk, sugar and cinnamon and use it for wet the pie.
Bake it for 50minutes at 190°(degrees Celsius) and during cooking brush the pie with milk twice.
allow to cool, sprinkle the pie with powdered sugar.
