Hi. This is Stephanie Manley from Copykat.com. Today, we're revisiting
Disney. I went to the food and wine festival a couple years ago, and I came
up with this fabulous mushroom stew that was being served there. So, this
is my version of their mushroom stew. So, this has a variety of mushrooms
in it to really give it a nice flavor. We are going to start off with some
dried porcini mushrooms. Now, I have these soaking in a little bit of
cream. This will help release a lot of the flavor. It's a great way to do
it. We are also using shiitake mushrooms and creamy mushrooms. So, we're
getting our mushroom flavors from a multiple of areas. Now, the rest of the
soup is pretty simple.
We're going to use carrots, celery, some onion. Now, you can use either
vegetable stock or chicken stock, and we're going to use a little bit of
cream to give the soup a little bit more body. Our seasonings are going to
be simply a little salt, pepper, some dill, and some parsley. If you have
access to fresh, go ahead and use those. Fresh is always better. We're
going to thicken the soup up with a little bit of flour and butter. We're
going to make a little roux and make it nice and thick. So, why don't we go
ahead? We'll get started chopping all of our veggies up, and we'll get the
soup on the stove.
OK. So, we're going to go ahead and start on our soup now. I'm using
chicken stock today, but you can definitely use vegetable stock. Chicken
stock is what I had on hand. So, what I'm going to do is I'm going to
simply pour this into the pot. We're going to come back, and we're going to
chop all the veggies. [music]. OK. So now, it's time to go ahead and chop
all of our veggies. Please, be sure to click on the link to my blog post.
It's in the description bar down below. It's going to give you the exact
measurements behind everything, so you know exactly what to put in.

So, we're going to chop up a couple cups of celery, some carrots, onions.
We're going to chop up our mushrooms. We're simply going to put all of
these into a pot and let it cook until nice and tender. Then, we'll finish
up our soup. [music]. OK. So now, we're going to add in our aromatic
vegetables into the pot. We're going to come back and chop up our
mushrooms, and we'll add those too. So, now we're going to add in the
remaining mushrooms. I'm just giving these kind of a quick chop, and we'll
go ahead and add these to our stock. So now, I'm going to take the porcini
mushrooms out of the cream here. Now, go ahead and reserve this cream and
use it for the soup. We're going to need it later. These mushrooms will
become nice and pliable, and again, we're just going to give these a chop.
Now, we're going to stick these mushrooms into our soup base.
OK. You can see we have all the mushrooms in here. We're simply going to
add these to the pot. We're going to stick a lid on it, and we're going to
come back in just about 30 minutes. OK. So, all of our vegetables have
finished cooking right now. Now, we're going to go ahead and thicken up our
stew. What we're going to do is we're going to take a mixture of butter and
flour. We're just going to mash these together until they form a nice
paste, and that's going to help thicken up our stew. [music]. Alright. We
get this all nice and mixed in. I am going to go ahead and start to drop
this in. This is going to thicken up the stew. It's just going to take a
couple minutes. [music]. We'll just stir this in. It's going to thicken up
beautifully.
While that goes in there, I'm going to go ahead and add that bit of cream
that we soaked the mushrooms in. This way, we saved all of that flavor.
We're going to go ahead and add in the remaining amount of cream that we
needed to for this recipe. [music]. So, the soup is starting to thicken.
Now, I like to use an immersion blender to go ahead and mix the soup up.
You'll get a wonderful thick texture. So, if you don't have an immersion
blender, that's OK. You don't need to use one. So, I'm going to go ahead
and give this soup a smash up. [music].
OK. So, we have just finished up our mushroom stew. Now, this goes really
well with a little bit of sour cream. This is when I love to add my little
bit of parsley and my dill. You can see this recipe was really, really easy
to do. If you don't have these three types of mushrooms, you can use
whatever you have on hand. The idea is just to use a variety of mushrooms
to get good really rich mushroom flavor. So, here you go. It's my version
