Cholesterol Myths and facts 2:8
If you feed trans fat to lab animals, bad things happen.
They often get cancer and have problems with reproduction
It is absolutely a good idea to stay away from trans fat
It is also called “partly hydrogen generated fat”
It said so on the labels
Probably, so nobody can guess that it is tran fat
Today, diet for diabetics has changed. At least some do.
The diabetics with age diabetes is doing a lot better,
if reducing carbs and increase fat intake
Studies show that you can have 50% calories intake from saturated
and it will not increase you cholesterol level.
On the contrary, HDL, the good cholesterol increase, and triglyceride decrease
Saturated fat has no bad influence on fat composition in the blood
Saturated fat is dominate in animal based food
Egg, cheese, meat, butter
Some plants also contains much saturated fat
Coconut oil, palm oil
Coconut fat contains most saturated fat of all food sources
Unsaturated fat is primarily from herbal products
Monounsaturated is in canola oil, olive oil
Polyunsaturated is in fish oil, canola oil , sunflower oil
In Polyunsaturated,
you have to distinguish between omega-3 and omega-6.
There have to be a balance between them
But this is very complicated
You have to look out for
corn oil and soy oil
They contain high levels of omega-6
Processed food contain high level of these
It is a comprehensive subject, and I am not a expect in all this,
so I will not say more about it
The conclusion of the first part.
Saturated fat leads to high cholesterol . That is wrong
There is also other studies showing the same
You ask people what they eat and measure their cholesterol
They ones glutton in fat, does not have higher cholesterol,
compared to the ones living carefully according heart recommendations
Nobody have been able show a difference
Let’s see…
Next step.
If saturated fat leads to infraction, then it also must increase atherosclerosis
There are studies, where people have been interview about their eating habits.
They gradually died with time, they were autopsied,
and the level of atherosclerosis was evaluated
It turns out that there are no differences.
The ones eating much saturated fat don’t have more atherosclerosis,
compared to the ones that do not.
This figure shows the relationships between how much fat is people eat in different countries
and how many die of infraction
In Japan, people eat little among of fat. In USA, they eat a lot
In Japan, very few die
In the USA, a lot
Beautify evidence, right?
Everybody clapped their hands when he published this
He was quoted in The Lancet. One of the largest scientific magazines
Now we know the reason for infarction!
There was just one problem, which two American statisticians discovered years later
Ancel Keys had, as usually, cheated
Now, I first draw his figure
Very nice
When they looked in the archives of FAO and WHO,
they discovered that he only included 6 countries.
At that time, there were data from 22 countries.
When you included everything, the picture was very different
I was something like this
Keys selected the one fitting his hypothesis,
and forgot about the other.
That’s modern science
In reality, it was worse than that
The countries he included..
1,2,3…
They were not located where he put them.
They were placed here
I Japan, they eat little saturated fat, and few die of infraction.
But, they eat more and more saturated fat and the level of infraction keeps going down
They don’t like telling anybody about that
Keys also made a study name “7 countries”,
where he followed 16-17 populations in 7 countries,
in 4-5 years
Then he claimed that they ones eating much saturated fat, died more frequent from infraction
Very few had read his report. It is 260 pages
If you do, you find out, that there is a lot of things not adding up
When you compared inside the countries,
there were large differences
I don’t have the numbers in my head, but
In Aabro and Karelen, they were eating 20% saturated fat,
But the dead frequency was 3 times higher in Karelen
He had no explanation for that
In Kreta and Corfu, the Greek islands,
They were eating 7-8% saturated fat
This was very good, because few died of infraction in Kreta
Unfortunately, in Corfu, 13-14 times more people died of infraction
He had not explanation for that either
He said, we have a few deviations, but future science will explain it
That has not happened
I talked about Japan. That is interesting
There is a big study name “The Japanese Emigrant Study”
They studied Japanese living in Japan and USA
In Japan, cholesterol level is low, as well as infraction
In the USA, the other way around
When Japanese move to USA, their cholesterol increased and rate of infraction
Nice evidence,.. or
There was a British scientist, a little more curious than the rest
He was looking at the Japanese moving to USA
Some of them were living in small japans communities
Living with Japanese traditions
while other tried to adapt to the American way of live
