The best food is all of the veal dishes I like the Veal Saltinbocca like I made before
Another one that people really like is what Dominic is making
The Cavatelli Bada Bing

Thats the original Cavatelli Bada Bing
I'm gonna start off with picking up some Cavatelli, which we make fresh
Its an egg pasta, liquid, flour and eggs.
A seasalt, and when this has become nice and hot
We are going to put it in this wheel of parmesan This is a Grana Padana parmiggiano
A very fine cheese so the heat softens up the cheese enough for me to make it work
Scrape it and in the meantime we make a little sauce with bruschetta, tomatoes, basil, and butter
There is little bit of pyrotecnics involved in this dish so we are going to start off with
Putting a little bit of *** just to get a little bit of heat going
Here we go
Light up the ***
This goes inside the wheel parmesano
Now this here like i said it won't melt the cheese It's only going to soften the cheese up
While the cheese is getting nice and soft here
Bruschetta here
A little fresh tomatoes
Black pepper
A little bit of salt
Fresh basil
I like fresh basil
A little bit of red pepper just to open up your taste buds
We call this the Bada Bing!
Now we give this just a little more heat and a little more ***
I'm going to put the pasta back inside
Now we just take the part of the cheese that got softened up from the heat
You can see the cheese being scrapped
This is nice parmesano parmiggiano from Grana Padana
And now just a little bit more just for taste
You can not have enough parmesano
That's it That's the Cavatelli Bada Bing.
You can have this as an appetizer or as a main course

Very flavorful very famous in Italy
You can easily make this at home
The ingredients are fresh garlic
Anchovies filets Fresh Italian parsley
Red crushed pepper
Fresh Basil
Fresh tomato diced up
Capers
Kalamata olives or any others you want to use
I'm going to start with some oil Extra *** olive oil
Start with some garlic You want to brown the garlic up a little bit
This garlic has got to be cooked fully to have full flavor
If not its a waste using it
Anchovies filets
And red crushed pepper
You want this to be nice and golden brown
You will start smelling the garlic when it cooks
Very good garlic smells good
A little bit of garlic in other words is the spice that we use
Its got a lot of taste and very healthy for you
As you can see now the anchovies are starting to melt
And you can smell it right? It smells very good
Parsley Basil
Fresh tomato's
Capers
kalamata olives
We are going to cook this for 3 or 4 minutes
Let all the flavors blend together
And then we are going to add any regular white wine
Whatever white wine you have at home Use it up one ounce
Its very easy anybody can do this at home
right now economy everything seem expensive People don't have lot of money but you can make at home easy
It's very very good
Now we are just going to simmer this for a couple of minutes
This is one of the oldest dishes in Italy very simple How much tomato sauce do we use?
1 cup
It can be any kind of tomato sauce marinara sauce Whatever it can be anything
It can be anything canned from the store It's just for flavor
Now you can smell it
Let me scoot behind you here
Now let me grab some pasta
I'm using here linguini It's already cooked
It's cooked al dente which means that it's got a little bite to it
And I'm just gonna reheat this
You can see the sauce has a nice flow to it a nice density
It's very easy again 5 minutes you got a nice dinner
You don't have to spend time at a nice restaurant

Very flavorful very easy to make very cheap to make and delicious
What we have here is olive oil
I am making chicken Saltinbocca A very easy dish to make very flavorful
The main ingredient of the dish is the sage
Its an herb very strong so you only use a little bit of it It's very automatic
It' got a nice flavor to it
What I'm using here is chicken breast boneless chicken breast
I cut it in half so it's kinda thin
I place it here
This is prosciutto which is an Italian dry ham
I'm going to place it on one side of the chicken
I'm going to press it
Then I'm going to dip it in flour on both sides
I'm doing this so when I fry this the prosciutto doesn't fall apart from the chicken
When you cook this make sure the prosciutto is face down so that it gets crispy
And you just want to make it a little bit crispy on each side
And now just a little suggestion when your cooking at home
Make sure the olive oil it's nice and hot
Otherwise the prosciutto will fall off the chicken
These are shallots It's almost like a baby onion
This is sage
Also if you cannot find sage at the store fresh
A lot of times you can buy it dry
But if you do that make sure you use very little bit It's very strong
And again this is a very easy dish to make Very economical
You don't have to break the bank to make this dish
I'm adding basil now
Then we are going to add mushroom
We are just going to cook this a little bit
This is Chablis wine white wine I like to use Chablis for this dish
But you can use any kind of white wine
What we have now is a lemon butter
Which is simply a butter melted with some lemon
And then is taken with the flour It's just like a base
At home you can just get regular chicken base and mix it with lemon juice and some butter
Just a lemony flavor
And now we just want to reduce this
And in the mean time here
We are going to get out this pan
Heat up some spinach
This is fontina cheese
It's an imported cheese from Italy Also very easy to find in store
I'm going to put each one on top of the chicken
This is fresh spinach right here
Add some salt and pepper
A new dish we are selling at Gratzzi we make veal Saltinbacco
Instead of using chicken we use veal and its one of our signature dishes
It's very good and one of our number one sellers here
I am making it with chicken now so it is easier to make at home
Chicken is cheaper
Not too many people want to spend 20 dollars on a pound for veal
This is perfect
There you have it chicken saltinbocca
Very easy full of taste and any body can make it at home
If i can make it you can make it!
I will show you how to cook very simply
First, I am adding a little bit of extra *** olive oil into the pan
Warming it up
Now next you have to add 1 tablespoon of fresh chopped garlic and 1 tablespoon capers
Brown the garlic
Put in capers
(Add 4 fresh basil leaves julienned) (Add 1 fresh roma ripe diced tomato)
(Chef tony helped to add 8 to 10 pitted Kalamata olives)
(Add 5 anchovies filets) (Add 1/2 a tablespoon of fresh chopped Italian parsley)
(Chef Tony helps add 1 ounce of white wine)
This is the best Italian wine (Sablet) but you can use any white wine
Then add the tomato sauce (1/2 a cup)
The pasta has already been cooked we will put it in here
He is my helper
Let's wait till the sauce gets a little bit thicker to add the pasta
This is very easy it can be done in 5 minutes You can cook this fast
Don't over cook it
