Since our potatoes are going to take the longest, we will start in on those first and we will
take our rear burner and we will turn it up to about 8 and then we'll fill our pan about
half way full with water. While we are waiting for that to heat up, we are going to take
our stick of butter and prepare our casserole dish so we'll just lightly rub butter over
the bottom of this dish and then we will put that aside. Take our potato and we'll give
that a wash to make sure that all the dirt is off of it and then we will come back and
go over it to pick off any eyes that have formed. We will discard those and then we
will peel our potato and the reason why we are peeling this instead of leaving the skin
on is we are going to be adding some oregano to this and with that brown skin after we
mash that potato we will not be able to see the flecks of oregano and we do want to have
that.
