Hi, I might not be a professional tennis player, but I'm really into the food they serve at the Wimbledon
Championships.
Strawberries and cream.
Which for the British is like the symbol of Summer.
And Summer's hot, so I think a better fit would be roasted strawberries and cream milkshake.
To cool off at the game.
Oh, good start, huh?
First thing I'm going to do is to roast some strawberries to intensify it's flavours.
And I would suggest that you buy organic, and always remember the smallest they are the more flavourful they
are.
In a baking pan add two cups of fresh strawberries.
Spread them evenly and add one tablespoon of balsamic vinegar.
Which will caramelize beautifully and compliment the strawberry flavour very well.
You will make them even sweeter, believe it or not.
Bake it at 300 Fahrenheit for one hour or until it's completely mushy. Just like this. Very ugly but
very delicious.
Now we just need ice cream.
You really think I'm going to use a store-bought ice cream?
Hell no.
Oooh!
You might not know, but with five simple ingredients you can make an excellent homemade ice cream.
I would say ice cream of the champions.
Whole milk and whipping cream are the most important fat source in the ice cream.
That's what makes it sooo creamy, and vanilla beans. The most versatile flavouring.
Sugar will not only sweeten the ice cream, but it will lower the freezing point.
And add last the egg yolk.
A natural emulsifier which will bind all the ingredients together.
In a pan over medium heat add one cup of milk, one cup of heavy cream and one vanilla bean with all the seeds
scraped off.
In a separate bowl add five yolks with half a cup of sugar.
Whisk the eggs yolks just until it's pale yellow and wait for the cream to come to a boil.
As soon as it boils turn off the heat, put a lid on and let it steep for ten minutes.
Add some of the hot liquid to the egg to temperate.
This prevents the eggs from cuagalating.
Bring it all back to the pan and over a low heat stir it constantly for fifteen minutes, or until it's thick enough
to coat the back of your spoon.
This is called Nappant and when you pass your finger through it it leave an open channel. This
is the texture we're looking for.
Have a bowl with ice and col this paste immediately.
After it cooled this would be the point you'd use your ice cream machine, but
you don't need one with me, cos I'm going to show you a trick.
First you place your mixture into a container and freeze it.
Then you're going to whisk vigorously every 30 minutes for the first two hours.
This will avoid ice crystals from forming so we're going to end up with a much smoother ice cream.
In 6 hours you'll have your baby ready.

Very fresh.
Just a splash.
And now the strawberries.
For one cup, one serving, I am going to use two scoops of ice cream
with two tablespoons of strawberries.
Oh?

The secret for a really good milkshake is not to blend it for too long.
Otherwise it's going to heat the cream, the ice cream and it's going to become too liquid.
So you need something smooth that reminds you of ice cream.
That's the right consistency.
Decorate with whipped cream and a strawberry on top.
Now a gorgeous roasted strawberry and cream milkshake
is better than a trophy.

It's like cream but a better cream because it's ice cream.
And it's like strawberries but better strawberries because they're roasted strawberries.
It's just a perfect combination.
It's crucial to have a milkshake straw.
You see how big it is?
So you can just suck everything through it. So like you can almost suck like a horse through it.
