We have seen growth more towards vegetarian than vegan.
But we do offer vegan items. We offer quite a bit of fish.
We also have student athletes
that are following their diet.
They needs to burn a lot of calories and eat a lot of protein-type items.
They have a vegetarian option at every meal.
So that's really nice.
And then they do different types of vegetarian options.
So there's always something new going on.
They've just introduced the black bean quesadillas, which are amazing.
From time to time, they do things like
quinoa-stuffed peppers, which are really good.
I really like their tetrazzini.
It's a zucchini mix on bread.
It's really good.
Last year was kind of hard because
I didn't really know all of the food that didn't have dairy products in it.
It was hard because a lot of stuff upset my stomach.
But this year, they brought a lot of different things in.
Now I actually know what has dairy and what doesn't have dairy in it.
It's better on my stomach. I can actually go and have a meal.
The college definitely has options available.
We've got gluten-free tortillas, gluten-free bread,
waffles
pizza crust
I talked to Brad and they're working with different gluten-free companies to try and get
more gluten-free food. The school is definitely making progress.
Over fall break, they were working on trying to revamp some of their recipes.
Instead of using flower as a thickener, they'll use corn starch or something else.
Then anything with a sauce, it's more friendly
for people who can't have anything with wheat.
If there were nuts in some food, they would have a sign
so I would know what to avoid.
If I would raise a concern, ask them if there are nuts in this,
they'll totally be fine with checking.
So all is well.
