How to Make Irish Coffee Cupcakes. For St. Patrick's Day -- or any day -- whip up a batch
of Irish cream cupcakes with coffee frosting for a delicious dessert that's sure to please.
You will need Package super yellow cake mix Package chocolate pudding mix 3 eggs 3/4 c.
Irish cream 1/3 c. vegetable oil 1 tsp. vanilla 1/2 c. unsalted butter, softened 1 lb. powdered
sugar 1 tbsp. milk 3 tbsp. strong coffee Friends Cupcake pan and cupcake liners. Step 1. Preheat
your oven to 325 degrees and place the cupcake liners in the cupcake pan. Step 2. Combine
the cake and pudding mixes in a large mixing bowl. Step 3. Mix the eggs, Irish cream, oil,
and vanilla in the bowl with the dry ingredients and combine until the mixture is thick but
smooth. Step 4. Pour the batter into the cupcake liners, filling each liner two-thirds full.
Bake the cupcakes for 20 to 25 minutes, until a toothpick inserted into the middle of a
cupcake comes out clean. Remove the cupcakes from the oven and let them cool. You can freeze
unfrosted cupcakes for up to 3 months. Step 5. Beat the butter in a large bowl using a
hand held mixer. Gradually add the sugar and continue beating. Step 6. Add the milk and
coffee, and continue beating the frosting until it is stiff but spreadable. Step 7.
Place a dollop of frosting on the center of each cupcake, and spread it evenly from the
center to the edges. Now put on a pot of coffee, invite some friends over, and enjoy your tasty
