Hello, I'm Ladonna Jenkins, and I'm an
Eastern Illinois University dietetic intern.
Today, I'm going to teach you how to
make a low-calorie dessert cookie.
This recipe is great for individuals that have
coronary heart disease.
You might ask yourself, what is coronary heart disease?
Coronary heart disease is narrowing of the
small blood vessels that supply blood and oxygen to your heart.
Most individuals experience symptoms with this disease,
but you might have it and not experience any symptoms at all.
Chest pain and discomfort are the most common.
This pain occurs when the heart does not receive
enough blood and oxygen.
It may happen more with activity or increased emotions.
Other symptoms include shortness of breath
and fatigue with activity.
Often individuals take medications to manage
coronary heart disease.
Taking one aspirin a day will prevent blood clots
from forming in the arteries and may reduce your chances
of having a heart attack.
Another way to prevent the worsening of coronary heart
disease is through lifestyle modifications.
These include a low or reduced-sodium diet,
a heart-healthy diet that's low in transfat, saturated fat,
and cholesterol, and exercise to maintain a healthy body weight.
Individuals often struggle with maintaining a healthy
body weight and being able to consume a dessert.
This dessert is a low-calorie no-bake cookie that's
quick and easy to make.
Ingredients include Splenda instead of sugar, skim milk,
unsweetened cocoa, margarine, oats,
peanut butter, and vanilla.
First, in a medium-sized saucepan, you combine
1/2 cup of skim milk, 4 tablespoons of unsweetened
cocoa, 1 3/4 cups of Splenda, and 1/2 cup of margarine.
And you will bring this to a boil and stir consistently for
one minute and thirty seconds.
After you take it off the heat, then you will add 3 cups
of oats, 1 teaspoon of vanilla, and 1/2 cup of peanut butter.
Then you'll drop your cookie onto wax paper
with 1 tablespoon and then let cool for 15 minutes.
