On behalf of Expert Village my name is Elizabeth Muller and today we're making Chicken Fricassee
Spanish Style. As you can see I'm cutting up the onion real, real small, real, real
tiny. I'm going to cut up some more. Cutting it real, real small like this. I'm going to
end up chopping it in a little bit like I did before. Still chunky in some areas, too
big for me to chop. And I'm going to go ahead and add the other stuff to it in a minute
after I finish making it small. I'm cutting up some more of these. I'm going to place
this together and mix it and you'll see what I mean as I go. Little sofrito again that
I'm making. Sofrito is what we use in a lot of Spanish meals and it consists of all types
of peppers and onions and spices and we call is sofrito. Red based sofrito is with tomato
sauce and green based sofrito is with different kind of green vegetable like cilantro.
