Hey guys in this video, I will show how I cook beans with another staple food in a pressure
pot.
I usually soak the beans overnight or for at least 3 hours.
This greatly reduces beans bloating. The next morning, I rinse the beans in cool
water.
Put it in the pressure pot and pour water to cover the beans.
The level of water should be about 1 inch above the level of the beans.
Add onions, stock cubes, pepper and palm oil.
Now, this is where it gets scientific. I cover the pot and leave it to boil without
pressurising the pot.
When you pressurize a pressure pot, what you are doing is applying this high amount of
pressure inside the pot such that the ingredients do not mix together.
Every ingredient is like: woo Ö stay away, I have this huge wall of pressure around me.
So they are all like that in the pot. So what Iím trying to do here is to simulate
a normal pot by allowing the contents of the pot to boil so that the ingredients can interact
with each other, mingle with each other to create a nice flavour before I cover the pot.
This non-interaction of ingredients is why most people complain that the food they cook
with a pressure pot does not taste as delicious as the food they cook with a normal pot.
So once it boils, I cover the pot and pressurize it.
My pressure pot has pressure 1 & 2. For beans porridge I use pressure 1 and cook
on medium to high heat for 25 to 30 minutes. While the porridge or pottage is cooking,
I peel and cut the yam into medium cubes. If you are using plantains or potatoes, it
is the same process. Peel them, cut and set aside.
After 25 to 30 minutes, the beans should be done.
Cool under running water till the pot is depressurized.
Then put it back on the stove.
Add salt and the yam cubes. The yam cubes should absorb all that water.
Cover the pot and cook on medium to high heat till the yam or whatever staple you added
is done. If using ripe plantains, it may not absorb
all that water so you can cook just the beans on high heat till some of the water has dried
before adding the plantains. When the staple food is done, stir and turn
off the heat. I like my beans porridge a little bit moist
so that water you see there is just perfect. Leave to stand for about 5 minutes and you
will see that once it cools down a bit, it is no longer as watery.
