Boil green peas, carrot and cauliflower in a cooker or pot
Don't boil vegetables too much, they only need to be soft and tender. Boil only till a whistle
Add some water
In the meanwhile we will prepare masala for bhaji
Heat a pan
Add clarified butter
Our vegetables are boiled, turn off the gas under cooker
Clarified butter is also heated, now add Cumin seeds to it
Add asafoetida
Add ginger
Add green chillies
Saute it
Add capsicum
Saute for 2 minutes
Add about half of the butter
Add tomatoes
Add salt
Add turmeric powder

Fennel seeds and garam masala give a very nice flavour to pav bhaji
Tomatoes are cooked, now mash them
Add some water
Open the cooker
Add boiled vegetables to the masala
Add potatoes
Add paprika, it gives a very nice colour to bhaji
Add fenugreek leaves
Add lemon juice
Bhaji is ready, turn off the heat and cover it
Now we'll prepare pav
Heat a skillet
Cut pav (buns) into two halves
Add some butter over skillet
Toast pav on skillet until golden brown
These are done, similarly toast other pavs also
Turn off the gas
Pav bhaji is ready, now we'll serve it.
Add some butter
Put pav
Put a lemon

Pav bhaji is ready
You can have it in breakfast, tea time or light meal
