To select eggs, first off you always want to check the expiration date on your egg carton.
If the eggs are expired, do not buy them. You also want to open your egg carton, and
check to make sure that your eggs are all nice and uncracked. If you have cracked eggs,
go ahead and discard that carton. Also, whenever you're purchasing eggs, you'll typically see
brown and white eggs. Really, the only difference is this color of the shell on the outside
of the eggs. Typically, there's no nutritional difference in these two eggs. Also, look at
the size of the eggs that you're purchasing. They range anywhere from small all the way
to jumbo, so there is several sizes that you can purchase. And whenever you're looking
at a recipe, for example for baking, and it does mention the use of an egg, typically
they're talking about the large egg, unless it's otherwise specified. You always want
to make sure that if you do have a cracked egg, or an egg falls in your refrigerator,
that you clean it up immediately and check for any places that could have been cross-contamination.
Eggs can contain salmonella. And that is how you select an egg.
