Hey what's up everybody? Danny from Danny Mac's Kitchen
good to see you Let me ask you guys a quick question
How many of you have been to a really great, upscale steakhouse?
Like Smith and Wollensky or Peter Lugers? If you haven't, Here's the deal...
When you go to one of these places you order an entree, it comes with nothing
You have to pay extra everything is a la carte
All the sides are extra The thing is all the sides rock!
I'm telling ya the vegetable, the potatoes they are amazing, you gotta pay for it
but it's well, well worth it 1 of my favorites is creamed spinach
which I'm going to show you how to make It's really, really, super easy
You're absolutely going to love it and it's going to make a great addition to your
meal Let's get started!
So roughly we're going to be making about 6 portions of creamed spinach today
So I have 3 bags here, they have been cleaned of all the stems
I have 1 large onion chopped finely 6 ounces of butter
4 ounces of chopped pancetta 6 ounces of flour
3 ounces of parmesan cheese 2 cups of milk
We're going to be usina a little bit of olive oil
and just salt and pepper to taste Get yourself a decent size sauce pan
over medium-high heat for about 45 seconds
We're going to add about an ounce and a half of olive oil here
Let that heat up and we're going to start wilting our spinach
Start adding your spinach I know it looks like a lot
but it's really going to wilt down Mix it up
We're going to do this in increments because we have a lot of spinach
Get it good and coated Cover for about 30 seconds
Let that steam work in Every 30 seconds give the spinach a good toss
Just keep adding Repeat the process
Add, stir, cover Add, stir, cover
Alright let's add the last of this Move on to the next step
Cover for another 30 seconds Looking good and wilted
turn off your flame Get yourself another bowl with a strainer
we have a lot of excess liquid which we want to get rid of
Can't have watery spinach
You can see all the liquid coming out already Just let that sit here and we're
going to move on to our next step My pan has been heating up over medium high
heat Melt your butter
Once your butter is fully melted add the onion
Butter is good and melted, add the onion Cook for about 2 to 3 minutes til translucent
Add the pancetta, cook for 3 to 4 more minutes
At this point add your 6 ounces of flour This is all purpose flour
Mix it in We're creating a roux which
is gonna thicken our sauce which is going to make our creamed spinach
Cook this for about a minute and a half-2 minutes
Cook some of that starch out of there Add 2 cups of milk, whole milk
This roux is going to thicken the milk up It's got to come to a boil though
before that's going to happen but I'm going to add some cheese now anyway
Using parmesan, 3 ounces and I'm going to season with some fresh ground pepper
No additional salt, Pancetta is salty, cheese has salt so we don't really need it
but definitely pepper So let this come to a boil you see
it's thickening already Once it starts bubbling we're going to
reduce it to a simmer, we're going to cook it for 2 more minutes
and we're pretty much done as you can see we've gotten
really, really, thick this is exactly what I want
been cooking for about We're going to let this rest for a second
I've drained my spinach a minute a minute and a half
Go ahead turn your flame off I'm putting it back in the pot
I'm going to add about half of the mixture I made with the bacon and the onions
I'm going to make more spinach later and use the other half
depending on your party and how many people you are cooking for
you can cut this recipe in half or you can actually freeze this
and use it at a later date Really mix this good
Let's make a really nice presentation Don't need to be going to any
steakhouse to get this! I'll tell ya that!
Neither will you and they charge a lot of money for it too
Like 15 bucks What!? I'm not paying 15 bucks!
Make it at home (chuckles) This is how you want it
You want it nice and tight but really creamy
That's why I had you drain it because if it's all watery and soggy
it turns out to be a disaster MM! MM!

Don't be spending a lot of money in the steakhouses on these side dishes
anymore because you can make it at home Super, super, simple
Pancetta is what they don't want you to know about
It's their secret ingredient or so they think
