Hey Cookaholics, Chef Kendra here and today we're making one of my favorite childhood
treats. We are making Toasted Almond Ice Cream Bars. I used to get them off the Good humor
truck. I used to get them at Kroger.
My friends used to bring them to me. I used to eat them all the time. But guess what?
They don't sell them where I live.
But that's OK because I came up with a version that I can make anytime and that's really
delicious. It's also pretty easy. So let's do what we do. Head into the kitchen and make
it happen.
OK, we have our topping stuff relaxing over here so let's get started. We're going to
add our almonds to a food process.
But this is something you can also do by just chopping them up. We're going to give this
thing a couple of pulses and we'll be good to go. It doesn't take but a few seconds.
So this is the consistency we're looking for guys. Small little bits but not ground into
almond dusk.
We're going to get a non-stick pan over medium low heat. Just like so. Add our almond and
get our butter in there. We're going to stir this around and melt the butter and get a
little color on our almonds. Add the sugar and we're going to stir that around until
the sugar has melted.
Now we're going to turn off the heat and sprinkle on some salt and add our extracts to these
boys. We're going to give this a final stir and then move our crunchy goodness to a silpat
or plate. We're going to pat it flat and let it cool.
Straight up I don't have care if you have to raid Ben & Jerry's freezer, just get yourself
some vanilla ice cream! This is homemade tho. We let it get soft but you can warm it in
the microwave.
Now we're just scooping our ice cream in our molds. We're not going to fill them all the
way to the top because they expand in the freezer and we don't want our tops to pop
off or the plastic to crack.
We put the lids on top and we're going to freeze these boys for 5 hours.
We're using hot tap water to loosen them. Pull them . Show our perfection to the camera
like a boss! OK, you don't have to do that last part! dip the bars in our fantastic almond
coating.
Place on a baking sheet lined with parchment and toss them back in the freezer for another
hour so they can firm back up.
Or you can make the topping and just serve that over ice cream. That's all it is to it.
