With the same butter that we used for the leeks, generously butter the pan. Evenly spread
the potatoes in, wonderful crackling noise. Take your spatula and really press it in.
You want to leave this for a good eight minutes. Resist the temptation to flip it prematurely
because otherwise, a little bit of salt and a little hint of pepper. Don't flip it prematurely
because then it'll just fall apart, which is just fine. It's a totally different look.
But if we can today, we're gonna try to get it to flip all in one go. So leave that for
a good eight to ten minutes on medium heat.
