welcome back to another cooking video, I'm Chef Devaux and today I'm going to show you how to make
these special vegetable pinwheels garnish, now you make them out of
any vegetable where you can make thin strips like this
that are flexible and they are just beautiful garnish to use on sushi platters
or any other food platter just to make it pop, so they are pretty simple to make
here is how
ok so first off you want to take all your vegetables and you want to cut them to
the same length, so what I have here is a cucumber, carrot and zucchini.
there we go, now you want to cut each of them in to strips but
first you want to create a flat surface to work on
now once you have cut your vegetables with a flat side you can use a cheese
knife like this thing
to do the strip perfect, or you can
like this she yet say nothing just use a mandoline, like this machine here
same function just you use it differently, and they both create the same strip
now I don't actually have a location for you to buy this cheese knife online since I bought it
in a local store in holland
but you can get this mandoline online

they both do the same job, but if you have a cheese knife at home you can just use that
otherwise be used to it by hand but takes a little bit more
patience
there we go
all the same result just it methods
now just do that with your
cucumber zucchini and your carrots, ok so you begin by placing down a piece of zucchini and
then a piece cucumber and then last but not least a piece of carrot
now you simply begin by making some cuts
at 45 degrees ago halfway through
all three sheets and are about
one to two millimeters thick
the cuts are at a 45 degree angle to
the center line of all three, and you make them all the way across
once you have done that
you simply start rolling in one side and you keep rolling
nice tight roll all the way through
and then once you reach the end
what you do is place a toothpick
through it all to keep together, break off any access of the toothpick
and you can put that in the middle of the sushi platter and it will just
look amazing, it's really simple to make but it's a quite stunning garnish to look at
