Hello! In this video, we will prepare Plantain Moi Moi known as Ukpo Ogede in Igbo.
Here are the ingredients you will need.
First we trim the uma leaves and wash them thoroughly.
Watch my How to Cook Moi Moi with leaves video to see how to do that.
If you don't have uma leaves, you can use aluminium foil bags.
Mix the plantain flour with some cool water till you get a medium consistency.
Peel and cut the plantains into small pieces to make it easier for the blender.
Then prepare all the other ingredients you will need.
Now it's time to blend them.
Add the plantains,
onions,
pepper,
stock cube,
crayfish
and finally the plantain flour mix.
Add just enough water to help the blades of your blender move.
Then blend till very smooth.
Set a small quantity of water in a pot to boil.
Pour the plantain moi moi mix into a sizeable bowl.
Add salt to your taste.
Plantain Moi Moi does not need a lot of salt so be careful.
Add palm oil and mix till well combined.
When the water boils, add a base for the plantain moi moi wraps.
I use this stainless steel base when I am cooking the plantain moi moi with aluminium
foil bags.
Since I'm using uma leaves, I use the stalk from those leaves.
Scoop the mix into the leaves like this ...
and gently place it in the pot of boiling water.
Repeat the process for the rest of the Plantain Moi Moi mix.
When done, cover them with uma leaves and cook on high heat for 20 to 25 minutes.
And it's done!
Spread them out to cool down completely and set.
Enjoy them as a snack with a chilled drink.
For breakfast, serve with Akamu also known as Ogi, Custard and Oatmeal.
You can also serve them with beans porridge.
